Redeeming myself
We had a dinner with the Hartmans and Gilberts a while back at our house. I’d had all the ingredients to make caramel turtles for a while and so we decided to make them for dessert. I’ve made caramel before, but had forgotten how finicky candy can be. I cooked the caramel to temperature, but when I put it on the pecans it seemed too runny. I should have let it cool a little and thicken up, then tried again, but instead we put it back on the heat. If you’ve made candy before you know that cooking it longer creates a harder end product, so we ended up with caramel that could require the help of a dentist if not eaten with a lot of care.
Today I made them again, being extra careful about the temperature of the caramel. Thankfully these turned out much better and I could sleep a little easier at night. The real miracle was that Betsy slept long enough for me to make the caramel and get it on the pecans before waking up! I did have to hold her while I did the chocolate and salt, but that also went surprisingly well. You don’t know how much you can do one handed until you have kids.
