{"id":1019,"date":"2009-05-18T17:08:55","date_gmt":"2009-05-18T23:08:55","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1019"},"modified":"2009-07-30T13:18:13","modified_gmt":"2009-07-30T19:18:13","slug":"chocolate-mocha-cupcakes-with-chocolate-chip-cream-cheese-frosting","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/05\/18\/chocolate-mocha-cupcakes-with-chocolate-chip-cream-cheese-frosting\/","title":{"rendered":"Chocolate Mocha Cupcakes with Chocolate Chip Cream Cheese Frosting"},"content":{"rendered":"<p>My friend Jackie had a birthday this past Friday, so she was getting a dozen cupcakes whether she liked it or not.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1020\" title=\"cupcake3\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake3.jpg?resize=500%2C410\" alt=\"cupcake3\" width=\"500\" height=\"410\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake3.jpg?w=500 500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake3.jpg?resize=300%2C246 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" data-recalc-dims=\"1\" \/><\/p>\n<p>I used a boxed chocolate cake mix for the cupcakes. \u00a0I know&#8230;baking from a mix is not my style. \u00a0But cake mixes are always reliable, and I haven&#8217;t yet found a terrific chocolate cupcake recipe. \u00a0So, cake mix it is!<\/p>\n<p>I added a tablespoon of instant coffee to the batter, but it wasn&#8217;t a dominant flavor in the cupcake. \u00a0I might try to add some brewed coffee next time in place of some of the water in the recipe. \u00a0<!--more--><\/p>\n<h3>Chocolate Mocha Cupcakes<\/h3>\n<ul>\n<li>chocolate cake mix<\/li>\n<li>eggs, water and oil called for in cake mix<\/li>\n<li>1-2 tablespoons instant coffee granules<\/li>\n<\/ul>\n<ol>\n<li>Prepare cake mix according to package directions<\/li>\n<li>Mix in instant coffee granules<\/li>\n<li>Bake accoring to package directions<\/li>\n<li>Let cool completely before frosting<\/li>\n<\/ol>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1024\" title=\"cupcake5\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake5.jpg?resize=453%2C281\" alt=\"cupcake5\" width=\"453\" height=\"281\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake5.jpg?w=453 453w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake5.jpg?resize=300%2C186 300w\" sizes=\"(max-width: 453px) 100vw, 453px\" data-recalc-dims=\"1\" \/>I made cream cheese frosting to finish these cupcakes. \u00a0I really wanted to make these a little different, so I went digging in the cabinet for something that would make the frosting special. \u00a0I decided to finely chop up 2 1\/2 ounces of semisweet chocolate and added it to the frosting.<\/p>\n<h3>Cream Cheese Chocolate Chip Frosting<\/h3>\n<ul>\n<li>1 stick butter, room temp<\/li>\n<li>8 ounces cream cheese, room temp<\/li>\n<li>1 pound (about 4 cups) powdered sugar<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>2-3 ounces semisweet chocolate, finely chopped (or mini chocolate chips)<\/li>\n<\/ul>\n<ol>\n<li>Beat butter and cream cheese until smooth.<\/li>\n<li>Add in powdered sugar about a cup at a time, scraping the sides of the bowl as needed.<\/li>\n<li>Add vanilla and mix well.<\/li>\n<li>Stir in chocolate with a spatula.<\/li>\n<\/ol>\n<p>The little pieces of chocolate in the frosting were such a great addition to an otherwise simple cupcake.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1021\" title=\"cupcake1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake1.jpg?resize=450%2C361\" alt=\"cupcake1\" width=\"450\" height=\"361\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake1.jpg?w=450 450w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/05\/cupcake1.jpg?resize=300%2C240 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" data-recalc-dims=\"1\" \/><\/p>\n<p>Happy Birthday, Jackie!<\/p>\n<p>After Ben and I ate one cupcake each for a taste test I had 10 cupcakes left. \u00a0What would be the fate of these delicious, sugary delights?
