{"id":1051,"date":"2009-06-11T14:30:51","date_gmt":"2009-06-11T20:30:51","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1051"},"modified":"2009-07-24T22:46:04","modified_gmt":"2009-07-25T04:46:04","slug":"soda-bread-so-easy-a-monkey-can-do-it","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/06\/11\/soda-bread-so-easy-a-monkey-can-do-it\/","title":{"rendered":"Soda Bread: So easy a monkey can do it"},"content":{"rendered":"<p>What do you do when you need bread for dinner and it&#8217;s 6:oo, and your husband doesn&#8217;t have his cell phone, so you can&#8217;t make him pick up a loaf on his way home? \u00a0Make this soda bread!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1052\" title=\"soda_bread\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/06\/soda_bread.jpg?resize=400%2C300\" alt=\"soda_bread\" width=\"400\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/06\/soda_bread.jpg?w=400 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/06\/soda_bread.jpg?resize=300%2C225 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" data-recalc-dims=\"1\" \/><\/p>\n<p>I made this last night for dinner, and it was delicious. \u00a0A nice crunchy exterior with a soft interior. \u00a0I had to make a few changes to the original recipe\u00a0since my kitchen is pretty far from being well stocked at the moment. \u00a0I added some dried thyme to make the bread a bit savory. \u00a0If you leave out the thyme, this bread would be great plain with a spread of butter and some honey. \u00a0Raisins would make it a nice breakfast bread.<\/p>\n<p><!--more-->The orginal recipe is <a href=\"http:\/\/allrecipes.com\/Recipe\/Grandpa-McAndrews-Irish-Soda-Bread\/Detail.aspx\" target=\"_blank\">here<\/a> on allrecipes. \u00a0Here is my altered recipe.<\/p>\n<h2>Soda Bread<\/h2>\n<ul>\n<li>3 cups all-purpose flour<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>2 tablespoons white sugar<\/li>\n<li>1\/4 teaspoon kosher salt<\/li>\n<li>1 &#8211; 2 teaspoons dried thyme<\/li>\n<li>1 egg, beaten<\/li>\n<li>1 cup sour cream<\/li>\n<li>1 tablespoon water<\/li>\n<li>2 tablespoons butter, melted<\/li>\n<\/ul>\n<ol>\n<li><span>Preheat the oven to 350 degrees F (175 degrees C). Grease a cast iron skillet. \u00a0Use some bacon grease if you have it!<\/span><\/li>\n<li><span>In a medium bowl, mix together the flour, baking soda, sugar, salt and thyme. Make a well in the center and add the egg, buttermilk, and melted margarine. Stir until all of the dry ingredients are absorbed. Turn the dough out onto a floured surface and knead for a few quick turns just to even out the dough. Handle the dough as little as possible.
