{"id":108,"date":"2008-08-05T17:07:51","date_gmt":"2008-08-05T23:07:51","guid":{"rendered":"http:\/\/carrieandben.benzinnecker.com\/blog\/?p=108"},"modified":"2009-12-01T23:03:07","modified_gmt":"2009-12-02T05:03:07","slug":"accidental-peach-cobbler","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2008\/08\/05\/accidental-peach-cobbler\/","title":{"rendered":"Accidental Peach Cobbler"},"content":{"rendered":"<p>I bought peaches for a dinner party a few nights ago.\u00a0 My plan was to cut them in half, remove the pit, sprinkle with some brown sugar, broil them and serve with Blue Bell Homemade Vanilla ice cream&#8230;tada!\u00a0 The easiest dessert next to scooping ice cream from a carton into a bowl!\u00a0 I will have to try this another time. Due to the extreme fun of the evening as it progressed, dessert became an afterthought and I found myself with 6 beautiful peaches and not a thing to do with them.\u00a0 The wheels start turning and I raid my kitchen&#8230;a container of blackberries&#8230;butter&#8230;sugar&#8230; it shall be a COBBLER!\u00a0 I usually end up making crisps, with oats and pecans.\u00a0 I wanted to try more of a cake or biscuit type topping for this dessert just to shake things up.\u00a0 After all, I am a culinary rebel.\u00a0 I referenced a few different recipes and came up with this one.\u00a0 I must admit, this was delicious despite the fact that I kinda burt the topping \ud83d\ude42\u00a0 Here are the changes I would make for future cobbler endeavors.<\/p>\n<p>1.\u00a0 Add 1 more containers of blackberries unless you don&#8217;t like seeds, just add more peaches<\/p>\n<p>2.\u00a0 A teaspoon or so more cornstarch to counter the slight soupiness<\/p>\n<p>3.\u00a0 Don&#8217;t let Ben have any&#8230;more for me<\/p>\n<p><strong>Peach Blackberry Cobbler<\/strong><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/08\/cobbler.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-109\" title=\"cobbler\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/08\/cobbler.jpg?resize=300%2C225\" alt=\"\" width=\"300\" height=\"225\" https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/08\/cobbler.jpg?w=400 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>4-6 fresh peaches peeled, pitted and sliced<\/p>\n<p>1 (or 2) containers fresh blackberries<\/p>\n<p>1\/4 cup white sugar<\/p>\n<p>1\/4 cup brown sugar<\/p>\n<p>1 t lemon juice<\/p>\n<p>3 t cornstarch (will try 4 next time)<\/p>\n<p>1\/2 t cinnamon<\/p>\n<p>Mix all ingredients together and pour into a 2 quart casserole.\u00a0 Cook for 10 minutes in 400 oven.<\/p>\n<p>1 cup flour<\/p>\n<p>1\/2 cup white sugar (or use half brown, half white)<\/p>\n<p>1 1\/2 t baking powder<\/p>\n<p>1\/2 t salt<\/p>\n<p>6 T cold butter cut into cubes<\/p>\n<p>1\/4 cup boiling water<\/p>\n<p>Combine all ingredients through salt in a large bowl.\u00a0 Using a pastry blender or your hands, cut butter into flour mixture until the butter is in small pieces and the mixture resembles a coarse meal.\u00a0 Mix in water until just combined.\u00a0 Take casserole out of the oven and drop dough on top of the fruit in mounds.\u00a0 Sprinkle top of cobbler with a few tablespoons of white sugar and bake for 30 to 35 minutes.\u00a0 Top should be lightly browned and fruit bubbly.<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script
