{"id":1098,"date":"2009-06-24T15:37:20","date_gmt":"2009-06-24T21:37:20","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1098"},"modified":"2009-07-24T18:31:47","modified_gmt":"2009-07-25T00:31:47","slug":"strawberries-and-cream-cookies","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/06\/24\/strawberries-and-cream-cookies\/","title":{"rendered":"Strawberries and Cream Cookies"},"content":{"rendered":"<p>A plethora of strawberries found its way into my fridge, and they needed to be used quickly. \u00a0I thought about making jam, but strawberry jam didn&#8217;t seem too exciting. \u00a0I could make more strawberry frosting and freeze it, but I wanted to try something new. \u00a0These cookies are from this month&#8217;s <a href=\"http:\/\/www.marthastewart.com\/recipe\/strawberry-shortcake-cookies?autonomy_kw=strawberry%20cookies&amp;rsc=header_4\" target=\"_blank\">Martha Stewart Living<\/a>. \u00a0I found this recipe on a blog I hadn&#8217;t read before, <a href=\"http:\/\/sliceofsueshe.wordpress.com\/2009\/06\/12\/strawberry-shortcake-cookies\/\" target=\"_blank\">SliceofSueShe<\/a>.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1099\" title=\"cookie1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/06\/cookie1.jpg?resize=450%2C462\" alt=\"cookie1\" width=\"450\" height=\"462\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/06\/cookie1.jpg?w=450 450w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/06\/cookie1.jpg?resize=292%2C300 292w\" sizes=\"(max-width: 450px) 100vw, 450px\" data-recalc-dims=\"1\" \/><\/p>\n<p>The method used to make these cookies creates a light fluffy cookie that is not too sweet. \u00a0The resulting texture reminded me of a soft scone. \u00a0The strawberry pieces are tart and sweet. \u00a0I did not sprinkle them with sugar, but I imagine that adds a nice crunch on top of these soft cookies. \u00a0A simple drizzle of a vanilla glaze would also be nice.<\/p>\n<p><!--more-->My only complaint is that they do not keep very well. \u00a0I made them last night and the leftovers I stored in a tupperware. \u00a0They were very soggy this afternoon. \u00a0So, eat them the day you make them!<\/p>\n<h2>Strawberries and Cream Cookies<\/h2>\n<p>(Strawberry-Shortcake Cookies)<\/p>\n<p>Martha Stewart Living<\/p>\n<p style=\"font-size: 12px; Combine strawberries, lemon juice, and 2 tablespoons granulated sugar. Whisk together flour, baking powder, salt, and remaining 7 tablespoons granulated sugar in a large bowl. Cut in the butter with a pastry cutter, or rub in with your fingers, until mixture resembles coarse crumbs. Sprinkle with sanding sugar, and bake until golden brown, 15 to 20 minutes. Transfer to a wire rack, and let cool.
