{"id":1189,"date":"2009-07-25T15:16:48","date_gmt":"2009-07-25T21:16:48","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1189"},"modified":"2009-07-25T15:16:48","modified_gmt":"2009-07-25T21:16:48","slug":"summer-vegetable-rolls-with-spicy-peanut-sauce","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/07\/25\/summer-vegetable-rolls-with-spicy-peanut-sauce\/","title":{"rendered":"Summer Vegetable Rolls with Spicy Peanut Sauce"},"content":{"rendered":"<p>This is time consuming, frustrating, quite prep intensive, and not easy. \u00a0The resulting dish is delicious and worth every drop of sweat and shed tear.<\/p>\n<p>Summer rolls are one of those things that seems so daunting that most people, or maybe just me, do not even want to attempt to make them at home. \u00a0Why spend so much time preparing something like this? \u00a0Why not just be content to order them at a restaurant where someone else labors instead of you? \u00a0Because once you know how to do it you will realize that it&#8217;s not an impossible task and that they taste better when you&#8217;ve made them yourself. \u00a0Oh, and it&#8217;s quite a bit cheaper than restaurant fare.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1226\" title=\"summerrolls2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/07\/summerrolls2.gif?resize=325%2C395\" alt=\"summerrolls2\" width=\"325\" height=\"395\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/07\/summerrolls2.gif?w=325 325w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/07\/summerrolls2.gif?resize=246%2C300 246w\" sizes=\"(max-width: 325px) 100vw, 325px\" data-recalc-dims=\"1\" \/><\/p>\n<p>This <a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Vegetable-Summer-Rolls-105012\" target=\"_blank\">recipe<\/a> is from Epicurious.com, and had really high fork ratings and 95% of people would make them again, so I figured I could handle it. \u00a0I prepped everything and made the sauce early in the day. \u00a0I didn&#8217;t really measure my vegetables and herbs. \u00a0I chopped and shredded more than I needed and made more noodles than called for.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1227\" title=\"summerrolls3\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/07\/summerrolls3.gif?resize=375%2C474\" alt=\"summerrolls3\" width=\"375\" height=\"474\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/07\/summerrolls3.gif?w=375 375w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/07\/summerrolls3.gif?resize=237%2C300 237w\" sizes=\"(max-width: 375px) 100vw, 375px\" data-recalc-dims=\"1\" \/><\/p>\n<p>This resulted in a lot of leftover veggies, but made more rolls and I had more chances to screw up and tear the rice paper&#8230;which, by the way, is very easy to do! \u00a0Use a light hand with the wrappers and be prepared to toss some into the trashcan. margin: 0px;\">3\/4 teaspoon dried hot red pepper flakes<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1 teaspoon vegetable oil<\/li>\n<li style=\"padding: 0px; margin: 0px;\">3 tablespoons water<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1 tablespoon creamy peanut butter<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1 tablespoon hoisin sauce<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1 teaspoon tomato paste<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1 ounce bean thread noodles (cellophane noodles) or thin rice noodles<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1 tablespoon seasoned rice vinegar<\/li>\n<li style=\"padding: 0px; margin: 0px;\">4 (8-inch) rice-paper rounds, plus additional in case some tear<\/li>\n<li style=\"padding: 0px; margin: 0px;\">2 red-leaf lettuce leaves, ribs cut out and discarded and leaves halved<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1\/4 cup fresh mint leaves<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1\/4 cup fresh basil leaves (preferably Thai)<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1\/2 cup thinly sliced Napa cabbage<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1\/4 cup fresh cilantro leaves<\/li>\n<li style=\"padding: 0px; margin: 0px;\">1\/3 cup coarsely shredded carrot (1 medium)<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<p style=\"margin-top: 0px; margin-right: 0px; margin-bottom: 10px; margin-left: 0px; font-size: 13px; line-height: 20px; padding: 0px;\"><strong>Make sauce:<\/strong> Cook onion, garlic, and red pepper flakes in oil in a small heavy saucepan over moderate heat, stirring, until pale golden, about 4 minutes. Whisk in remaining sauce ingredients. Simmer, whisking, 1 minute, then cool.<\/p>\n<p style=\"margin-top: 0px; margin-right: 0px; margin-bottom: 10px; margin-left: 0px; font-size: 13px; line-height: 20px; padding: 0px;\"><strong>Make summer rolls:<\/strong> Cover noodles with boiling-hot water and soak 15 minutes, then drain well in a sieve. Pat dry between paper towels and toss with vinegar and salt to taste.<\/p>\n<p style=\"margin-top: 0px; margin-right: 0px; margin-bottom: 10px; margin-left: 0px; font-size: 13px; line-height: 20px; padding: 0px;\">Put a double thickness of paper towel on a work surface and fill a shallow baking pan with warm water. Soak 1 rice-paper round (make sure there are no holes) in warm water until pliable, 30 seconds to 1 minute, then transfer to paper towels.<\/p>\n<p style=\"margin-top: 0px; margin-right: 0px; margin-bottom: 10px; margin-left: 0px; font-size: 13px; line-height: 20px; padding: 0px;\">Arrange 1 piece of lettuce on bottom half of soaked rice paper, folding or tearing to fit and leaving a 1-inch border along edge. Spread one fourth of peanut sauce over lettuce and top with one fourth each of mint, basil, cabbage, and noodles. Roll up rice paper tightly around filling and, after rolling halfway, arrange one fourth of cilantro and carrot along crease. Then fold in sides and continue rolling. Transfer summer roll to a plate and cover with dampened paper towels.<\/p>\n<p style=\"margin-top: 0px; margin-right: 0px; margin-bottom: 10px; margin-left: 0px; font-size: 13px; line-height: 20px; padding: 0px;\">Make 3 more rolls in same manner.
