{"id":1346,"date":"2009-08-05T08:35:07","date_gmt":"2009-08-05T14:35:07","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1346"},"modified":"2009-08-05T20:41:16","modified_gmt":"2009-08-06T02:41:16","slug":"raspberry-buttermilk-cake-my-cute-nephew-and-my-crazy-husband","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/08\/05\/raspberry-buttermilk-cake-my-cute-nephew-and-my-crazy-husband\/","title":{"rendered":"Raspberry Buttermilk Cake, My Cute Nephew and My Crazy Husband"},"content":{"rendered":"<p>The flavor of this cake was absolutely delicious, and slightly sweet. \u00a0The tartness of the raspberries is lovely. \u00a0The texture was wonderfully moist with a nice tender crumb. \u00a0I got this recipe from <a href=\"http:\/\/smittenkitchen.com\/2009\/05\/raspberry-buttermilk-cake\/\" target=\"_blank\">Smitten Kitchen<\/a>. \u00a0I was disappointed that mine did not end up looking as beautiful as hers, but I am sure I will make this cake again, so we&#8217;ll see if I can improve on the appearance. \u00a0I followed her recipe and instructions completely except that I added a cap-full, about 1\/4 teaspoon, of almond extract just because I love the flavor of almond. \u00a0I served this cake when my parents came through Amarillo after dinner.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1364\" title=\"buttermilk1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk1.jpg?resize=425%2C249\" alt=\"buttermilk1\" width=\"425\" height=\"249\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk1.jpg?w=425 425w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk1.jpg?resize=300%2C175 300w\" sizes=\"(max-width: 425px) 100vw, 425px\" data-recalc-dims=\"1\" \/><\/p>\n<p>It was a light cake, perfect all by itself, no whipped cream needed. \u00a0I used turbinado sugar instead of white granulated sugar and loved the crunch it provided. \u00a0This cake is so easy to prepare and has simple ingredients most people have on hand. \u00a0The buttermilk is also non-essential since you can make your own buttermilk in 10 minutes with regular milk and some lemon juice or vinegar.<\/p>\n<p><!--more--><\/p>\n<p><span style=\"text-decoration: underline;\">Make your own buttermilk: <\/span>Add one\u00a0teaspoon\u00a0<em>tablespoon<\/em> of vinegar or lemon juice to one cup of milk and let it sit, about 10 minutes.<\/p>\n<p>The only problem I had is that after baking NONE of the raspberries were visible. \u00a0It still tastes wonderful, so it wasn&#8217;t a problem. \u00a0It was also a nice surprise for the guests who saw the cake initially as a boring, thin, sugar topped cake and were pleasantly surprised to find a few raspberries at the bottom of their slice.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-1365\" title=\"buttermilk2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk2.jpg?resize=300%2C225\" alt=\"buttermilk2\" width=\"300\" height=\"225\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk2.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk2.jpg?w=425 425w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-1366\" title=\"buttermilk3\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk3.jpg?resize=300%2C241\" alt=\"buttermilk3\" width=\"300\" height=\"241\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk3.jpg?resize=300%2C241 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/buttermilk3.jpg?w=425 425w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/p>\n<h2>Simple Berry Buttermilk Cake<\/h2>\n<ul>\n<li>1 cup all-purpose flour<\/li>\n<li>1\/2 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/2 stick unsalted butter, softened<\/li>\n<li>2\/3 cup sugar<\/li>\n<li>1\/2 teaspoon pure vanilla extract<\/li>\n<li>1\/4 teaspoon almond extract<\/li>\n<li>1\/2 teaspoon finely grated lemon zest (optional)<\/li>\n<li>1 large egg<\/li>\n<li>1\/2 cup well-shaken buttermilk<\/li>\n<li>1 cup fresh raspberries (or any berry)<\/li>\n<\/ul>\n<p>Preheat oven to 400\u00b0F with rack in middle. Butter and flour a 9-inch round cake pan.<\/p>\n<p>Whisk together flour, baking powder, baking soda, and salt and set aside. In a larger bowl, beat butter and 2\/3 cup (146 grams) sugar with an electric mixer at medium-high speed until pale and fluffy, about two minutes, then beat in vanilla and zest, if using. Add egg and beat well.<\/p>\n<p>At low speed, mix in flour mixture in three batches, alternating with buttermilk, beginning and ending with flour, and mixing until just combined.Spoon batter into cake pan, smoothing top. Scatter raspberries evenly over top and sprinkle with remaining 1 1\/2 tablespoons sugar.<\/p>\n<p>Bake until cake is golden and a wooden pick inserted into center comes out clean, 20 to 25 minutes. Cool in pan 10 minutes, then turn out onto a rack and cool to warm, 10 to 15 minutes more.
