{"id":1369,"date":"2009-08-07T15:06:00","date_gmt":"2009-08-07T21:06:00","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1369"},"modified":"2009-08-07T19:12:20","modified_gmt":"2009-08-08T01:12:20","slug":"colorado-oatmeal-coconut-chocolate-chip-bars","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/08\/07\/colorado-oatmeal-coconut-chocolate-chip-bars\/","title":{"rendered":"Colorado Oatmeal, Coconut, Chocolate Chip Bars"},"content":{"rendered":"<p>I am part of a family who thoroughly enjoys snacking. \u00a0That is why we needed some cookie bars up here in Durango for after finishing off all the cookies we had from <a href=\"http:\/\/www.yelp.com\/biz\/bread-durango\" target=\"_blank\">Bread Bakery<\/a> in Durango. \u00a0They have some incredible cookies, a delicious ham and brie sandwich and an incredible goat cheese and thyme scone that I plan to try to duplicate at some point. \u00a0So, after all the crazy delicious goodies were gone I made these cookie bars. \u00a0I found a<a href=\"http:\/\/allrecipes.com\/Recipe\/Oatmeal-Chocolate-Coconut-Chewy\/Detail.aspx\" target=\"_blank\"> recipe for oatmeal, coconut cookies <\/a>from Allrecipes.com, and changed a few things in the dough and also made bars instead of cookies. \u00a0I was reminded by my sister after I had pressed the dough into the pan that I should have done something to compensate for the high altitude, but it was a little late for that. \u00a0So, I took my chances. \u00a0It turned out not to be an issue. \u00a0The bars did take a bit longer to bake than I would have thought. \u00a0Other than that, the flavor and texture were good.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1370\" title=\"cookie3\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/cookie3.jpg?resize=550%2C446\" alt=\"cookie3\" width=\"550\" height=\"446\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/cookie3.jpg?w=550 550w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/cookie3.jpg?resize=300%2C243 300w\" sizes=\"(max-width: 550px) 100vw, 550px\" data-recalc-dims=\"1\" \/><\/p>\n<p><!--more--><\/p>\n<p>The oats make them very hearty and substantial. \u00a0I used Girhadelli Milk Chocolate chips, which are larger than regular chocolate chips. \u00a0Any chocolate chips would be good, but the bigger chips create a bigger and more delicious bite of soft chocolate in addition to the crunchy oats and chewy coconut.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1373\" title=\"cookie6\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/cookie6.jpg?resize=500%2C335\" alt=\"cookie6\" width=\"500\" height=\"335\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/cookie6.jpg?w=500 500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/cookie6.jpg?resize=300%2C201 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" data-recalc-dims=\"1\" \/><\/p>\n<h3 style=\"text-align: center;\"><strong><em>Oatmeal, Coconut, Chocolate Chip Bars<\/em><\/strong><strong><\/strong><\/h3>\n<ul>\n<li>1 cup butter, softened<\/li>\n<li>1 1\/4 cups dark brown sugar<\/li>\n<li>1\/2 cup white sugar<\/li>\n<li>2 eggs<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>1 3\/4 cups all-purpose flour<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 teaspoon salt<\/li>\n<li>3 cups rolled oats<\/li>\n<li>2 cups semisweet chocolate chips<\/li>\n<li>1 cup shredded coconut<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350 degrees F.<\/li>\n<li>In a large bowl, cream together      the butter, brown sugar and white sugar until smooth. Beat in the eggs one      at a time, then add the vanilla. Combine the flour, baking soda and salt;      beat a little at a time into the sugar mixture until well blended.
