{"id":1384,"date":"2009-08-08T06:44:50","date_gmt":"2009-08-08T12:44:50","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=1384"},"modified":"2009-08-09T20:40:19","modified_gmt":"2009-08-10T02:40:19","slug":"portabella-burgers-and-the-magic-dog","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/08\/08\/portabella-burgers-and-the-magic-dog\/","title":{"rendered":"Portabella Burgers and The Magic Dog"},"content":{"rendered":"<p>When the lodge was built here in 1983 they cleared quite a bit of the land and dug their own lovely lakes fed by a stream that flows through the property and creates a tranquil atmosphere. \u00a0If you walk toward the stream from the house you can walk over a bridge and find yourself in a little meadow with a gazebo lit with twinkle lights, a grill, and a couple picnic tables. \u00a0We had dinner out at this adorable gazebo this week. \u00a0We had hamburgers, hot dogs, portabella burgers, potato salad, skewered grilled mushrooms and roasted zucchini. \u00a0There are few things better than grilled food cooked over a real fire, not a gas grill. \u00a0There is a completely different flavor and smell to the food that is just not there when you cook with gas.<\/p>\n<p>The burgers were delicious. \u00a0You just cannot go wrong with a juicy meat patty, melting cheese, ketchup, crisp lettuce, tomato and pickles on a toasted sesame seed bun. \u00a0This is close to perfection.<\/p>\n<p>We also decided to grill some portabella mushrooms. \u00a0I made my portabella &#8220;burger&#8221; just as I would a regular burger, all the same toppings as my meaty burger. \u00a0I think I would trade the cheddar cheese in for swiss cheese next time. \u00a0I liked the veggies on it, but it would be tasty with just cheese.<\/p>\n<p>FYI, try to buy portabellas that are ready to grill. \u00a0Scraping out the gills was quite possibly one of the nastiest tasks I have had to complete in the kitchen. \u00a0Sometimes it is OK to buy a food product that makes life easier&#8230;and less nasty.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1388\" title=\"portabella1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/portabella1.jpg?resize=600%2C344\" alt=\"portabella1\" width=\"600\" height=\"344\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/portabella1.jpg?w=600 600w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/08\/portabella1.jpg?resize=300%2C172 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" data-recalc-dims=\"1\" \/><\/p>\n<p><!--more--><\/p>\n<p><strong>Portabella Burgers<\/strong><\/p>\n<p>Serves 4<\/p>\n<ul>\n<li>4 portabella      mushrooms, gills scraped out<\/li>\n<li>olive oil<\/li>\n<li>kosher salt<\/li>\n<li>pepper<\/li>\n<li>4 slices of      cheese<\/li>\n<li>4 burger buns<\/li>\n<\/ul>\n<ol>\n<li>Clean mushrooms.<\/li>\n<li>Drizzle both      sides of the mushrooms with olive oil and sprinkle with salt and pepper.<\/li>\n<li>Prepare grill      with hot coals or heat gas grill to medium high.<\/li>\n<li>Grill mushrooms,      tops down, for 4-5 minutes.<\/li>\n<li>Flip mushrooms,      place cheese slices on tops and grill for 5-6 more minutes.<\/li>\n<li>Remove from the      grill, place on warm buns and dress as desired!<\/li>\n<\/ol>\n<p>My sister Lisa invented one of the best tasting hot dogs I have ever eaten. \u00a0It had simple beginnings. \u00a0A Hebrew National dog, grilled to perfection. \u00a0Place this simple dog on a toasted hot dog bun. \u00a0Now things are about to get crazy. \u00a0Top this hot dog with queso (veleveeta and rotel is the way to go) beef chili, dill pickles, thin sliced white onions, and French&#8217;s yellow mustard. \u00a0Goodness gracious this thing was good. \u00a0We made our own beef chili the night before, but you can use canned for a similar effect. \u00a0This hot dog has been named for its inventor. Please ignore the bite out of the hot dog bun&#8230;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1386\" title=\"hotdog1\" \/><\/p>\n<p><strong>Lisa&#8217;s Magic Dog<\/strong><\/p>\n<p>Serves 1<\/p>\n<ul>\n<li>1 grilled hot      dog<\/li>\n<li>1 toasted hot      dog bun<\/li>\n<li>1-2 tablespoons      queso, prefer <a href=\"http:\/\/www.texmex.net\/Rotel\/cheesdip.htm\" target=\"_blank\">veleveeta and rotel recipe<\/a><\/li>\n<li>1-2 tablespoons      beef chili<\/li>\n<li>4-6 dill pickle      slices, or dill pickle relish<\/li>\n<li>4-5 slices white      onion, or chopped onion<\/li>\n<li>French&#8217;s yellow      mustard, a thin squirt along the length of the dog<\/li>\n<\/ul>\n<p>Place the hot dog in the bun and top with ingredients above. \u00a0Eat up&#8230;then make yourself another one&#8230;and maybe one more after that.<\/p>\n<p>It is our last day in Durango. \u00a0Yesterday we took one last hike up Engineer&#8217;s Mountain. \u00a0None of us made it to the top. \u00a0Lisa, Randy and Sarah made it the farthest. \u00a0Lindsey, my parents and I were the first group to bail and head back to the car. \u00a0It was a beautiful hike, but Dad had to rest a few times.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1387\" title=\"mountain1\"
