\u00a0She was such a good sport. \u00a0Thanks for humoring me, mom!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-1800\" title=\"stirfry2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/09\/stirfry2.jpg?resize=300%2C207\" alt=\"stirfry2\" width=\"300\" height=\"207\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/09\/stirfry2.jpg?resize=300%2C207 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/09\/stirfry2.jpg?w=400 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/p>\n<p><a href=\"http:\/\/www.foodnetwork.com\/recipes\/tyler-florence\/thai-coconut-chicken-soup-recipe\/index.html\" target=\"_blank\">This recipe<\/a> is from Tyler Florence. \u00a0I took quite a few shortcuts with this since we were a bit strapped for time. \u00a0I used store bought chicken broth, left out the shredded chicken and the fish sauce, and used bean sprouts instead of straw mushrooms. \u00a0We served the soup with white rice and spinach.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-1802\" title=\"coconutsoup\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/09\/coconutsoup.jpg?resize=450%2C323\" alt=\"coconutsoup\" width=\"450\" height=\"323\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/09\/coconutsoup.jpg?w=450 450w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/09\/coconutsoup.jpg?resize=300%2C215 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" data-recalc-dims=\"1\" \/><\/p>\n<p>I liked the clean flavor that the\u00a0lemon grass\u00a0and lime juice provide. \u00a0The coconut milk makes it nice and rich, but not at all thick or overwhelming. \u00a0Adding shredded chicken to this would make it a great choice for a lunch or light dinner. \u00a0I liked the bean sprouts, but would have\u00a0preferred\u00a0thin slices of mushrooms instead with maybe just a few bean sprouts as a garnish.<\/p>\n<h3>Thai Coconut Soup<\/h3>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 quart chicken stock<\/li>\n<li>1 stalk lemon grass, white part only, cracked open with the flat side of a knife<\/li>\n<li>1 (3-inch) piece fresh ginger, peeled and thinly sliced<\/li>\n<li>2 small Thai chilies, halved lengthwise<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>1 (13-ounce) can unsweetened coconut milk<\/li>\n<li>1 1\/2 teaspoons sugar<\/li>\n<li>1 can bean sprouts, drained<\/li>\n<li>4 limes, juiced<\/li>\n<li>Kosher salt and freshly ground pepper<\/li>\n<li>1\/4 cup chopped fresh cilantro leaves<\/li>\n<li>Cooked white rice<\/li>\n<li>Spinach leaves<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Bring the stock to the boil over medium heat in a soup pot. Add the lemon grass, ginger, chilies, and garlic. Lower the heat to medium-low, cover, and gently simmer for 10 minutes to let the spices infuse the broth.<\/li>\n<li>Uncover and stir in the coconut milk, sugar, bean sprouts, and lime juice. Simmer for 5 minutes; season with salt and pepper. Ladle the soup into a soup tureen or individual serving bowls.
