\/><\/a><\/p>\n<p>I have an all time favorite recipe for chicken enchiladas. \u00a0The page in the cook book,<a href=\"http:\/\/www.jlaustin.org\/?nd=full&amp;key=757&amp;view=1\" target=\"_blank\"> Austin Entertains <\/a>from Austin&#8217;s Junior League, is stained and splattered with oil and tomatillo sauce. \u00a0The tomatillo chicken enchiladas are delicious, but a bit time consuming since you make the sauce yourself. \u00a0I&#8217;ve tried a few other recipes with mostly positive results. \u00a0Last week I decided to try the <a href=\"http:\/\/www.foodnetwork.com\/recipes\/tyler-florence\/chicken-enchiladas-recipe\/index.html\" target=\"_blank\">Chicken Enchiladas<\/a> from Tyler Florence on Food 911. \u00a0The recipe calls from canned enchilada sauce, so that would save me some time. \u00a0I also took short cuts by using a rotisserie chicken and 2 cans of diced green chiles. \u00a0I had to cut the stewed tomatoes into more manageable pieces, but I really enjoyed the big chunks of tomato in the enchiladas. \u00a0I also liked the addition of corn in these enchiladas and the smoky chipotle flavor. \u00a0We topped ours with sour cream and cilantro. \u00a0My husband and I really enjoyed these. \u00a0They were even good the next day reheated. \u00a0The tomatillo enchiladas remain a favorite, but these enchiladas are
