{"id":215,"date":"2008-10-01T21:31:01","date_gmt":"2008-10-02T03:31:01","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=215"},"modified":"2008-10-01T21:31:01","modified_gmt":"2008-10-02T03:31:01","slug":"cream-cheese-stuffed-oatmeal-cookies","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2008\/10\/01\/cream-cheese-stuffed-oatmeal-cookies\/","title":{"rendered":"Cream Cheese Stuffed Oatmeal Cookies"},"content":{"rendered":"<p>As some of you may know I really like the idea of stuffed food, especially desserts. \u00a0It&#8217;s a lovely little surprise! \u00a0I have stuffed a cake with twinkies, brownies with peanut butter, and a cake with oreos all with OK results. \u00a0But when I came across this recipe I knew that I was in for something special. \u00a0An oatmeal cookie, in and of itself a delicious treat, stuffed with sweet cream cheese. \u00a0Does life get any better? \u00a0Well, yes, of course it does. \u00a0However, this is close to heaven as far as cookies go. \u00a0I found this recipe on <a href=\"http:\/\/oatmealcookie.typepad.com\/\" target=\"_blank\">The Oatmeal Cookie Blog<\/a>. \u00a0He calls these cookies &#8220;Golden Girls&#8221;. \u00a0Another first was the use of ground graham crackers in the dough. \u00a0It actually makes a difference! \u00a0Not a huge flavor difference, but a more sturdy cookie. \u00a0The filling process was a little messy, but worth it. \u00a0I did not follow the instructions that Oatmeal Cookie guy gives. \u00a0I flattened the entire dough ball into a disk first. \u00a0Then I placed the cream cheese ball in the center of the disk. \u00a0To wrap the cream cheese in the cookie dough I folded the sides up around the cream cheese. \u00a0I rolled the filled dough back into a nice even ball. \u00a0I let the cookies chill in the freezer for the recommended 5 minutes, then flattened them a bit with the palm of my hand before baking. \u00a090% of the finished cookies had a nice amount of cream cheese smack dab in the middle. \u00a0However, I did open one cookie to discover that the ball of cream cheese was not only off center but still very much in ball shape making for one big ole bite of cream cheese&#8230;not the best ratio of cookie to cream cheese. \u00a0These cookies are delicious and I will make them again. \u00a0Here is the recipe from the Oatmeal Cookie Blog. \u00a0I love the way this guys writes his recipes! \u00a0A table to list ingredients&#8230;genius. \u00a0Oh, how I love organization.<\/p>\n<p style=\"text-align: center;\">Cream Cheese Stuffed Oatmeal Cookies (aka Golden Girls)<\/p>\n<table class=\"MsoTableGrid\" border=\"1\" cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\" align=\"center\"><span>Filling<\/span><\/p>\n<\/td>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\"><span>8 ounces room-temperature cream cheese<\/span><\/p>\n<p class=\"MsoNormal\"><span>4 tablespoons sugar<\/span><\/p>\n<p class=\"MsoNormal\"><span>2 teaspoons vanilla<\/span><\/p>\n<\/td>\n<\/tr>\n<tr>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\" align=\"center\"><span>Creamables<\/span><\/p>\n<\/td>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\"><span>2 sticks butter<\/span><\/p>\n<p class=\"MsoNormal\"><span>1 1\/2 cups brown sugar<\/span><\/p>\n<p class=\"MsoNormal\"><span>1\/2 cup white sugar<\/span><\/p>\n<p class=\"MsoNormal\"><span>1 tablespoon cinnamon<\/span><\/p>\n<\/td>\n<\/tr>\n<tr>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\" align=\"center\"><span>Wet Ingredients<\/span><\/p>\n<\/td>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\"><span>3 eggs<\/span><\/p>\n<p class=\"MsoNormal\"><span>2 teaspoons vanilla<\/span><\/p>\n<\/td>\n<\/tr>\n<tr>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\" align=\"center\"><span>Dry Ingredients<\/span><\/p>\n<\/td>\n<td width=\"295\" valign=\"top\">\n<p class=\"MsoNormal\"><span>2 cups finely ground graham crackers<\/span><\/p>\n<p class=\"MsoNormal\"><span>1 1\/2 cups flour<\/span><\/p>\n<p class=\"MsoNormal\"><span>2 1\/2 cups oatmeal<\/span><\/p>\n<p class=\"MsoNormal\"><span>1 teaspoon baking soda<\/span><\/p>\n<p class=\"MsoNormal\"><span>1\/2 teaspoon salt<\/span><\/p>\n<p class=\"MsoNormal\"><span>1 tablespoon cinnamon<\/span><\/p>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ol>\n<li>\n<div><span>Add the filling ingredients to a medium bowl and mix well.<span>\u00a0\u00a0<\/span>Let the mixture cool and solidify in the refrigerator until step 7.<\/span><\/div>\n<\/li>\n<li>\n<div><span><span>Preheat oven to 350<\/span><span>\u00ba.<\/span><\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>In your Kitchen Aid or a large mixing bowl, cream together the creamables.<\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>In a small bowl, whisk together the wet ingredients and then add to the creamables. Mix together until smooth.<\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>In another large mixing bowl, add the dry ingredients. Using a spatula, fold together until evenly distributed. Slowly add the dry ingredients to the creamables and wet ingredients. Mix until evenly combined.<\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>Shape dough into balls\u2014about 2 tablespoons each.<\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>Remove the filling mixture from the refrigerator and\u00a0<a href=\"http:\/\/youtube.com\/watch?v=doijR5S3GBA\">stuff<\/a>\u00a0each dough ball with 1 teaspoon of the mixture.<span>\u00a0\u00a0<\/span>Put the stuffed dough balls in the freezer for five minutes to firm up.<\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>Place chilled dough balls about 2 inches apart on Silpat- or parchment paper-lined cookie sheets.<\/span><\/div>\n<\/li>\n<li>\n<div class=\"MsoNormal\"><span>Bake at 350<\/span><span>\u00ba\u00a0<\/span><span>for 10-12 minutes or until golden brown. Remove the cookie sheets from the oven and let stand for 2 minutes.
