{"id":2266,"date":"2009-11-06T07:15:15","date_gmt":"2009-11-06T13:15:15","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=2266"},"modified":"2009-11-06T07:27:49","modified_gmt":"2009-11-06T13:27:49","slug":"croque-madame-sil-vous-plait","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/11\/06\/croque-madame-sil-vous-plait\/","title":{"rendered":"Croque Madame, S&#8217;il vous plait"},"content":{"rendered":"<p>Such a fancy name for a such a simple sandwich. \u00a0In short, this is a dressed up grilled cheese. \u00a0How dressed up, you ask? \u00a0Well, more dressed up than church on Sunday. \u00a0More dressed up than the night you anticipate being proposed to over a candle-lit dinner. \u00a0We&#8217;re talking dressed up for Senior prom where <em>you <\/em>have been nominated\u00a0for Prom Queen, and your boyfriend (the quarterback) is up for King. \u00a0This is a special sandwich.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-2278\" title=\"croque1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/croque1.jpg?resize=300%2C211\" alt=\"croque1\" width=\"300\" height=\"211\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/croque1.jpg?resize=300%2C211 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/croque1.jpg?w=400 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/p>\n<p>When I went to France in high school I was less inclined to embark on culinary adventures. \u00a0We dined at The Hark Rock Cafe, and I even ate lunch at McDonalds&#8230;more than once. \u00a0In Paris! \u00a0Crazy. \u00a0I know. \u00a0Let&#8217;s blame it on me being a naive teenager. \u00a0Let&#8217;s also blame that purchase of raspberry cigarettes on naivety. \u00a0Moving on&#8230;<\/p>\n<p>One day for lunch, famished from a morning visit to the Louvre, some friends and I stopped at the first cafe we saw. \u00a0Using some of my French food vocabulary I saw &#8220;croque-monsieur&#8221; on the menu and knew that a French grilled cheese with ham was something I could definitely enjoy. \u00a0A French version of fast food. \u00a0Warm, grilled bread, melted cheese and sweet &amp; salty ham. \u00a0You cannot go wrong with this choice.<\/p>\n<p><!--more--><\/p>\n<p>I love researching food, its origins and its history. \u00a0I find it fascinating. \u00a0In French, croque = crunch, monsieur = mister, madame = misses. \u00a0The croque-monsieur&#8217;s first recorded appearance on a Parisian caf\u00e9 menu was in 1910. Its earliest published use has been traced back to volume two of Proust&#8217;s Remembrance of Things Past (\u00c0 la recherche du temps perdu) (1918.) \u00a0The difference between the Monsieur and the Madame is this&#8230;a fried egg is placed atop the madame, while the monsieur is topped with a simple b\u00e9chamel sauce. \u00a0The Madame is thought to be named because the egg, with its yolk and surrounding white, looks like a woman&#8217;s hat.<\/p>\n<p>The staples of the sandwich are a hearty white french bread, gruyere cheese and ham. \u00a0Some dijon mustard is spread onto the bread slices, topped with some cheese and ham, then the other bread slice. \u00a0The sandwich is then grilled in a skillet on both sides. \u00a0Spread a good amount of decadent b\u00e9chamel sauce on each sandwich, then place them under the broiler for a few minutes to brown the tops. \u00a0You can quit here for a croque monsieur, or place a fried egg on top for a croque madame. \u00a0We made both variations, and I really like the fried egg. \u00a0I wasn&#8217;t sure I would, but it was delicious, and also very cute.<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2275\" title=\"food6\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/food6.jpg?resize=614%2C461\" alt=\"food6\" width=\"614\" height=\"461\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/food6.jpg?resize=1024%2C768 1024w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/food6.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/food6.jpg?w=1716 1716w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/food6.jpg?w=2574 2574w\" sizes=\"(max-width: 614px) 100vw, 614px\" data-recalc-dims=\"1\" \/><\/p>\n<h4>Croque Madame (<a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Croque-Madame-237589\" target=\"_blank\">courtesy of Epicurious.com<\/a>)<\/h4>\n<ul>\n<li>5 tablespoons unsalted butter<\/li>\n<li>3 tablespoons all-purpose flour<\/li>\n<li>2 cups whole milk<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/8 teaspoon black pepper<\/li>\n<li>1\/8 teaspoon freshly grated nutmeg<\/li>\n<li>3 1\/2 ounces coarsely grated Gruy\u00e8re cheese (1 1\/3 cups)<\/li>\n<li>8 slices firm white sandwich bread<\/li>\n<li>4 teaspoons Dijon mustard<\/li>\n<li>1\/2 pound thinly sliced cooked ham (preferably Black Forest)<\/li>\n<li>4 large eggs<\/li>\n<\/ul>\n<p><strong>Make sauce:<\/strong><\/p>\n<ol>\n<li>Melt 3 tablespoons butter in a 1- to 1 1\/2-quart heavy saucepan over moderately low heat, then whisk in flour and cook roux, whisking, 3 minutes.<\/li>\n<li>Whisk in milk and bring to a boil, whisking constantly. Reduce heat and simmer, whisking occasionally, 5 minutes. Whisk in salt, pepper, nutmeg, and 1\/3 cup cheese until cheese is melted.<\/li>\n<li>Remove from heat and cover surface directly with a sheet of wax paper.<\/li>\n<\/ol>\n<p><strong>Make sandwiches:<\/strong><\/p>\n<ol>\n<li>Spread 1 1\/2 tablespoons sauce evenly over each of 4 slices of bread, then sprinkle evenly with remaining cheese (1\/4 cup per slice). Spread mustard evenly on remaining 4 bread slices and top with ham, dividing it evenly, then invert onto cheese-topped bread to form sandwiches.<\/li>\n<li>Lightly oil a 15- by 10-inch shallow baking pan.<\/li>\n<li>Melt 1 tablespoon butter in a 12-inch nonstick skillet over moderately low heat, then cook sandwiches, turning over once, until golden, 3 to 4 minutes total. Remove from heat and transfer sandwiches to baking pan, then wipe out skillet with paper towels.<\/li>\n<li>Preheat broiler.<\/li>\n<li>Top each sandwich with 1\/3 cup sauce, spreading evenly. Broil sandwiches 4 to 5 inches from heat until sauce is bubbling and golden in spots, 2 to 3 minutes. Turn off broiler and transfer pan to lower third of oven to keep sandwiches warm.<\/li>\n<li>Heat remaining tablespoon butter in nonstick skillet over moderate heat until foam subsides, then crack\u00a0eggs into skillet and season with salt and pepper. Fry eggs, covered, until whites are just set and yolks are still runny, about 3 minutes.
