{"id":2395,"date":"2009-11-22T14:27:12","date_gmt":"2009-11-22T20:27:12","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=2395"},"modified":"2009-11-22T14:27:12","modified_gmt":"2009-11-22T20:27:12","slug":"crazy-delicious-creamed-corn","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/11\/22\/crazy-delicious-creamed-corn\/","title":{"rendered":"Crazy Delicious Creamed Corn"},"content":{"rendered":"<p>This was the side dish for last night&#8217;s dinner, but I could have eaten this as my meal and been very happy and satiated. \u00a0While contemplating dinner I had to consider a few things. \u00a0What did we have the last \u00a0few nights? \u00a0Thai curry and spaghetti casserole. \u00a0What kind of food is appropriate for the weather? \u00a0It&#8217;s cool, but not quite soup or chili weather yet. \u00a0How much time do I want to spend? \u00a0An hour tops. \u00a0Should I make something that is left-over friendly? \u00a0Yes! \u00a0Always yes. \u00a0After carefully considering all of these issues, I chose a Mexican style chipotle chicken and creamed corn.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-2405\" title=\"corn1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/corn1.jpg?resize=400%2C365\" alt=\"corn1\" width=\"400\" height=\"365\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/corn1.jpg?w=400 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/corn1.jpg?resize=300%2C273 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" data-recalc-dims=\"1\" \/><\/p>\n<p>The chicken was delicious, and served double duty in chicken tacos the following night. \u00a0However, the creamed corn was the star of this meal in my opinion. \u00a0I used canned whole kernel corn instead of corn cut fresh from the cob because I am lazy. \u00a0It still turned out great. \u00a0The preparation and total cooking time are minimal. \u00a0Using canned instead of fresh corn makes it even quicker. \u00a0I really liked the combination of whole kernels and creamy corn puree. \u00a0The contrasting textures are wonderful. \u00a0This side probably serves 4-5, but is great re-heated and would easily double, so go ahead and make a double batch. \u00a0It is that good.<\/p>\n<p><!--more--><\/p>\n<h4>Creamed Corn with Cilantro and Scallions (<a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/Cheesy-Creamed-Corn-with-Cilantro-354963\" target=\"_blank\">epicurious.com<\/a>)<\/h4>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-2404\" title=\"corn2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/11\/corn2.jpg?resize=300%2C217\" alt=\"corn2\" width=\"300\" height=\"217\" data-recalc-dims=\"1\" \/><\/p>\n<ul>\n<li>3 tablespoons unsalted butter<\/li>\n<li>1 1\/2 cups chopped scallions (about 6 large)<\/li>\n<li>12 ears corn, kernels cut from cobs (or about 3 cups canned and drained)<\/li>\n<li>2\/3 cup heavy cream<\/li>\n<li>2 teaspoons cornstarch<\/li>\n<li>1 large garlic clove<\/li>\n<li>6 ounces\u00a0<em>queso fresco<\/em> or mild feta, crumbled (1 1\/3 cups)<\/li>\n<li>1 cup cilantro sprigs<\/li>\n<\/ul>\n<ol>\n<li>Heat butter in a deep 12-inch heavy skillet over medium-high heat until foam subsides, then cook scallions, stirring occasionally, until softened, about 5 minutes. Add corn and 1\/2 teaspoon each of salt and pepper and cook, stirring occasionally, 5 minutes.<\/li>\n<li>Stir together cream and cornstarch in a small bowl until thoroughly combined, then add to corn and simmer, stirring, until slightly thickened, about 3 minutes. Transfer 1 1\/2 cups corn mixture to a blender with garlic and pur\u00e9e until smooth (use caution when blending hot liquids).
