\u00a0We were meant to be. \u00a0So, when November 30th rolls around I have a great reason to make this cake. \u00a0It is so perfect.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-2532\" title=\"icc1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/icc1.jpg?resize=249%2C257\" alt=\"icc1\" width=\"249\" height=\"257\" data-recalc-dims=\"1\" \/>I have several recipes for this cake. \u00a0All 3 are from mothers of my college friends. \u00a0They are hand written and marked with water, cake batter, and one is even scorched on the edge. \u00a0I love when recipes get like that. \u00a0I like to see the differences in recipes and figure out how those differences effect the end product. \u00a0With these recipes however,\u00a0the ingredients and\u00a0processes are\u00a0almost identical. \u00a0This leaves me to conclude that over time this recipe has been perfected and therefore should not be messed with.<\/p>\n<p><!--more--><\/p>\n<p>Every recipe used \u00a0butter <em>and<\/em> shortening. \u00a0Every recipe used 5 eggs, yolks and whites separated, the same amount of sugar, flour, vanilla etc. \u00a0Maybe all 3 mothers referenced the same Junior\u00a0League\u00a0Cookbook? \u00a0Who knows. \u00a0All I know is that this cake is delicious. \u00a0I love the coconut and pecans in the cake and the smooth and tangy cream cheese frosting that adorns the layers of dense and delicious\u00a0cake.<\/p>\n<p>So, here it is. \u00a0The most terrific Italian Cream Cake&#8230;Happy Birthday, Ben!<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2538\" title=\"food12\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/food12.jpg?resize=368%2C277\" alt=\"food12\" width=\"368\" height=\"277\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/food12.jpg?resize=1024%2C768 1024w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/food12.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/food12.jpg?w=1716 1716w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/food12.jpg?w=2574 2574w\" sizes=\"(max-width: 368px) 100vw, 368px\" data-recalc-dims=\"1\" \/><\/p>\n<h4>Italian Cream Cake<img decoding=\"async\" loading=\"lazy\" class=\"alignright size-medium wp-image-2537\" title=\"icc7\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/icc7.jpg?resize=300%2C296\" alt=\"icc7\" width=\"300\" height=\"296\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/icc7.jpg?resize=300%2C296 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/icc7.jpg?w=400 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/h4>\n<ul>\n<li>2 cups sugar<\/li>\n<li>1 stick butter, softened<\/li>\n<li>1\/2 cup shortening<\/li>\n<li>5 eggs, separated<\/li>\n<li>2 cups flour<\/li>\n<li>1 cup buttermilk<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>1 cup coconut<\/li>\n<li>1 cup chopped pecans<\/li>\n<\/ul>\n<ol>\n<li>In a samll bowl dissolve baking soda in buttermilk and let sit a few minutes.<\/li>\n<li>In large bowl beat butter, shortening and sugar until light and fluffy.<\/li>\n<li>Add in egg yolks, one at a time until well incorporated.<\/li>\n<li>Mix in flour and buttermilk alternately, beginning and ending with flour.<\/li>\n<li>Mix in coconut and pecans.<\/li>\n<li>Gently fold in stiffly beaten egg whites until just incorporated.<\/li>\n<li>Pour into 2 or 3 greased and floured\u00a08-inch cake pans.<\/li>\n<li>Bake at 350 for 25-30 minutes or until tops are light brown and tops spring back when pressed with your finger.<\/li>\n<li>Let cool, remove from pans and frost with cream cheese icing.<\/li>\n<\/ol>\n<h4>Cream Cheese Icing<\/h4>\n<ul>\n<li>1 stick butter, softened<\/li>\n<li>1 8-ounce package cream cheese, softened<\/li>\n<li>2-3 cups powdered sugar<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>1-2 tablespoons milk (if needed)<\/li>\n<\/ul>\n<ol>\n<li>Cream butter and cream cheese together until smooth.<\/li>\n<li>Add in powdered sugar and mix until smooth.<\/li>\n<li>Mix in\u00a0vanilla and milk if the frosting is too thick.<\/li>\n<\/ol>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2009\/12\/03\/italian-cream-cake-happy-birthday-ben\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>I love my husband. \u00a0I love when he has a birthday because I get to shower him with gifts, and a special birthday dinner.\u00a0 I really love that his favorite cake is Italian cream because that is also MY favorite cake! \u00a0What are the chances?
