{"id":249,"date":"2008-10-08T07:04:07","date_gmt":"2008-10-08T13:04:07","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=249"},"modified":"2008-10-08T07:04:07","modified_gmt":"2008-10-08T13:04:07","slug":"roasted-vegetable-lasagna","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2008\/10\/08\/roasted-vegetable-lasagna\/","title":{"rendered":"Roasted Vegetable Lasagna"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/veggielasagna.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-250\" title=\"veggielasagna\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/veggielasagna.jpg?resize=400%2C300\" alt=\"\" width=\"400\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/veggielasagna.jpg?w=400 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/veggielasagna.jpg?resize=300%2C225 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I&#8217;ll be the first to admit it. \u00a0This does not look like something you&#8217;d want to eat. \u00a0Kind of like chewed up food? \u00a0Anyway, looks can be deceiving&#8230;this was actually very good! \u00a0Ben liked it! \u00a0There are a few things I would change when I make this again.<\/p>\n<ol>\n<li>Use one lite and one fat free ricotta.<\/li>\n<li>After roasting the vegetables let them drain a bit on paper towels. \u00a0They were too juicy when I used them stright from the pan I roasted them in.<\/li>\n<li>Do not follow the layering in the recipe. \u00a0It ends with a layer of noodles and cheese&#8230;it does not work. \u00a0Using the no-boil noodles requires some moisture more than cheese can provide to cook them thouroghly. \u00a0I would end with noodles, half a can of tomatoes, veggies and last the mozzarella. \u00a0I&#8217;d also use a little more cheese than called for on top.<\/li>\n<li>Foil on top of cheese for 30 minutes? \u00a0Doesn&#8217;t cheese stick to foil? \u00a0Yes, it does! \u00a0Don&#8217;t use the foil on top unless you see its browning too much. \u00a0Or bake without the cheese with the foil for 20 minutes, then add the cheese and take off the foil for the last 10 minutes. \u00a0All I know is that a lot of the cheese ended up on the foil and not on the lasgana.<\/li>\n<\/ol>\n<p>Here is the recipe. \u00a0I found it on Epicurious. \u00a0It is a Self recipe and it pretty healthy. \u00a0And it is tasty too. \u00a0Healthy and delicious!<\/p>\n<p>Roasted Vegetable Lasagna, SELF magazine, March 2001<\/p>\n<p><strong>ingredients<\/strong><\/p>\n<div>\n<div id=\"ingredients\" class=\"content_unit dropshadowed\">\n<p>1 lb plum tomatoes, cut in 1\/4-inch slices<\/p>\n<p>1 lb zucchini, cut in 1\/4-inch slices<\/p>\n<p>1 lb yellow squash, cut in 1\/4-inch slices<\/p>\n<p>2 red bell peppers, cut in 1-inch strips<\/p>\n<p>2 green bell peppers, cut in 1-inch strips<\/p>\n<p>1\/2 lb mushroom caps, cut in 1\/4-inch slices<\/p>\n<p>1 tsp salt<\/p>\n<p>1 tbsp olive oil<\/p>\n<p>Vegetable-oil cooking spray<\/p>\n<p>1 egg white, lightly beaten<\/p>\n<p>2 containers (15 oz each) &#8220;lite&#8221; ricotta<\/p>\n<p>2 tbsp bottled pesto sauce<\/p>\n<p>1\/3 cup grated Parmesan<\/p>\n<p>3 cans (14 1\/2 oz each) diced tomatoes with garlic and onion<\/p>\n<p>12 oven-ready lasagna noodles (1 package)<\/p>\n<p>2cups shredded lowfat mozzarella<\/p><\/div>\n<div id=\"preparation\" class=\"content_unit dropshadowed\">\n<p><strong>Preparation<\/strong><\/p>\n<p>Preheat oven to 475\u00b0F. Toss plum tomatoes, zucchini, squash, peppers, mushrooms, salt, and oil in a bowl. Coat a baking sheet with cooking spray and place vegetables on it; roast 30 minutes. In a bowl, mix egg white, ricotta, pesto, and Parmesan. Coat a 9&#8243; x 12&#8243; baking pan with cooking spray. Spread 1 can tomatoes on the bottom. Top with 3 noodles. Spoon 1 1\/4 cups ricotta mix over noodles, then a layer of 3 cups vegetables, then 1\/2 cup mozzarella. Repeat this layer, starting with tomatoes. Add final can tomatoes, three noodles, remaining ricotta mix and vegetables. Top lasagna with last 3 noodles and 1 cup mozzarella. Cover with foil.
