{"id":2747,"date":"2009-12-24T12:20:07","date_gmt":"2009-12-24T18:20:07","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=2747"},"modified":"2009-12-24T12:20:07","modified_gmt":"2009-12-24T18:20:07","slug":"chicken-posole-with-avocado-and-lime","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2009\/12\/24\/chicken-posole-with-avocado-and-lime\/","title":{"rendered":"Chicken Posole with Avocado and Lime"},"content":{"rendered":"<p>This is a yummy, comforting and spicy soup that is similar to chicken tortilla soup, but with more substance and kick. \u00a0The hominy provides the substance, and the roasted poblanos give a smoky, spiciness that increases as it sits. \u00a0So be prepared for a spicier soup if you have any leftovers that you eat the next day. \u00a0The avocado and sour cream contrast the spice nicely.<\/p>\n<p>This is not &#8220;traditional&#8221; New Mexican posole\/pozole, which is usually made with pork. \u00a0So, I guess this is kind of a cheater, short cut recipe, but it is delicious, quick and easy. \u00a0We ate this with a green salad and cornbread. \u00a0Corn tortillas would also be great with this soup.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/posole.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-2751\" title=\"posole\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/posole.jpg?resize=400%2C291\" alt=\"\" width=\"400\" height=\"291\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/posole.jpg?w=400 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2009\/12\/posole.jpg?resize=300%2C218 300w\" sizes=\"(max-width: 400px) 100vw, 400px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p><a href=\"http:\/\/find.myrecipes.com\/recipes\/recipefinder.dyn?action=displayRecipe&amp;recipe_id=1947682\" target=\"_blank\">The recipe<\/a> came from Sunset magazine, and we made a few changes. \u00a0Some of the methods for putting the soup together didn&#8217;t make a whole lot of sense to me, and seemed to be a bit tedious. \u00a0I am sure that if you followed the directions step-by-step from the magazine you would end up with a great pot of soup.<\/p>\n<h5>Chicken Posole with Avocado and Lime<\/h5>\n<p>(Adapted from Sunset Magazine)<\/p>\n<ul>\n<li>3 large poblano chiles<\/li>\n<li>6 garlic cloves<\/li>\n<li>1 large onion<\/li>\n<li>2 cans (14 1\/2 oz. each) white hominy<\/li>\n<li>1 \u00bd \u00a0pounds boned, skinned chicken thighs<\/li>\n<li>1 teaspoon kosher salt<\/li>\n<li>1 \u00bd \u00a0teaspoons dried Mexican oregano<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>4 cups reduced-sodium chicken broth<\/li>\n<li>3 tablespoons ground red New Mexico chiles<\/li>\n<li>Garnishes: sliced avocado, lime wedges, cilantro sprigs, and sour cream<\/li>\n<\/ul>\n<ol>\n<li>Preheat broiler. When hot, broil poblanos on a baking sheet until blackened, turning as needed, about 15 minutes.<\/li>\n<li>Finely chop garlic and onion. Drain hominy; set aside.<\/li>\n<li>Boil chicken in water with salt and pepper for 15-20 minutes.\u00a0 Remove chicken, let cool, then shred.<\/li>\n<li>Heat oil in a large saucepan or soup pot over medium heat. Add onion mixture and oregano to pan and saut\u00e9 until onion is softened, 3 minutes. Add ground chiles to pan and cook, stirring, about 30 seconds.<\/li>\n<li>Add broth, hominy, and chicken to pan. Cover and bring to a boil, then reduce heat and simmer to blend flavors, 10 minutes.<\/li>\n<li>Remove stems, skins, and seeds from poblanos and discard; chop poblanos.<\/li>\n<li>Stir poblanos into posole and cook 1 minute.
