\u00a0I scoured through my cookbooks and found quite a few pumpkin bread and pumpkin cake recipes, and of course pumpkin pie recipes. \u00a0I really wanted to find a good pumpkin cookie recipe. \u00a0I found this recipe in my <a href=\"http:\/\/books.google.com\/books?id=EGErTyImlCAC&amp;dq=more+from+magnolia&amp;pg=PP1&amp;ots=psKQZfUBxk&amp;source=bn&amp;sig=FjJ6oK-vVP5VP3TSaIwJ4Lwu-sk&amp;hl=en&amp;sa=X&amp;oi=book_result&amp;resnum=4&amp;ct=result\" target=\"_blank\">More from Magnolia<\/a> cookbook. \u00a0This cookbook had been good to me. \u00a0It contains my absolute favorite banana bread recipe that has coconut and pecans in it. \u00a0So, I figured it was a safe bet to try these cake-like cookies. \u00a0<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-304\" title=\"pumpkin-cookie2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie2.jpg?resize=500%2C257\" alt=\"\" width=\"500\" height=\"257\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie2.jpg?w=500 500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie2.jpg?resize=300%2C154 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I liked this soft cookie, but would maybe add more walnuts. \u00a0They have a soft texture and a mild pumpkin flavor. \u00a0The spices are mild also, but that could be because I haven&#8217;t bought a new round of holiday season spices yet. \u00a0Note to self&#8230;buy new spices. \u00a0They are OK on their own, but they are incredible with the frosting! \u00a0The frosting was simple; powdered sugar, milk, vanilla and butter. \u00a0This is no ordinary butter, people. \u00a0Before adding the butter you brown it in a saucepan and that makes all the difference. \u00a0Browned butter adds this lovely nuttiness as well as little brown flecks to the otherwise boring white frosting. \u00a0I did not have enough frosting for all the cookies, so I will double it next time. \u00a0I am a frosting fan, so others may not see the need for more. \u00a0Come on though, what could be wrong with left-over frosting? \u00a0Keep it in the fridge and spread it on graham crackers, pretzels, or your finger. \u00a0<\/p>\n<p><strong>Pumpkin Walnut Cookies with Brown Butter Frosting <\/strong>(Adapted from More From Magnolia)<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-303\" title=\"pumpkin-cookie\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie.jpg?resize=350%2C337\" alt=\"\" width=\"350\" height=\"337\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie.jpg?w=350 350w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/10\/pumpkin-cookie.jpg?resize=300%2C288 300w\" sizes=\"(max-width: 350px) 100vw, 350px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Cookie<\/p>\n<ul>\n<li>2 1\/2 cups flour<\/li>\n<li>1 T baking powder<\/li>\n<li>1 t salt<\/li>\n<li>1 t allspice<\/li>\n<li>1 t cinnamon<\/li>\n<li>1\/2 t ground ginger<\/li>\n<li>4 T softened butter<\/li>\n<li>1 1\/2 cups brown sugar<\/li>\n<li>2 eggs at room temp.<\/li>\n<li>1 cup canned pumpkin puree<\/li>\n<li>2 t vanilla<\/li>\n<li>1 cup chopped walnuts<\/li>\n<\/ul>\n<p>Preheat oven to 375\u00b0 F.<\/p>\n<ol>\n<li>Combine all dry ingredients in a small bowl and set aside.<\/li>\n<li>Cream butter and sugar until well combined. \u00a0Add eggs, vanilla and pumpkin. \u00a0Mix well.<\/li>\n<li>Stir in the walnuts.<\/li>\n<li>Drop by rounded spoonfuls onto cookie sheets.<\/li>\n<li>Bake for 10-12 minutesm until lightly brown around the edges.<\/li>\n<li>Let cool for a few minutes on the sheets, then remove to cooling racks to cool completely.<\/li>\n<\/ol>\n<p>Brown Butter Frosting (doubled)<\/p>\n<div>\n<ul>\n<li>4 cups powdered sugar<\/li>\n<li>6 T milk<\/li>\n<li>2 t vanilla<\/li>\n<li>6 T butter<\/li>\n<\/ul>\n<ol>\n<li>Mix sugar, milk and vanilla in a small bowl.<\/li>\n<li>In a small saucepan, cook butter over medium high heat until lightly browned.<\/li>\n<li>Remove from heat and add to other ingredients. \u00a0Mix until well combined, smooth and creamy.<\/li>\n<li>Spread frosting onto each cooled cookie. \u00a0Top with a walnut half if desired.<\/li>\n<\/ol>\n<\/div>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2008\/10\/27\/pumpkin-week-part-i-pumpkin-walnut-cookies-with-brown-butter-frosting\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>I have decided to dedicate this week to that great orange fruit we all know and love, member of the cucurbitaceae family&#8230;drumroll please&#8230;the PUMPKIN!
