{"id":3120,"date":"2010-01-30T09:41:38","date_gmt":"2010-01-30T15:41:38","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=3120"},"modified":"2010-01-30T09:41:38","modified_gmt":"2010-01-30T15:41:38","slug":"classic-chicken-noodle-soup-for-the-soul","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/01\/30\/classic-chicken-noodle-soup-for-the-soul\/","title":{"rendered":"Classic Chicken Noodle Soup for the Soul"},"content":{"rendered":"<p>The last few days have been a bit, well, what&#8217;s the word&#8230;bad? \u00a0No, that will not do. \u00a0Terrible. \u00a0Dreadful. \u00a0Upsetting. \u00a0Frustrating. \u00a0Disheartening. \u00a0Disappointing. \u00a0Oh, and tear inducing. \u00a0Those will work.<\/p>\n<p>Here is my story. \u00a0I was scheduled to leave Amarillo Friday morning at 6:55 to help prepare everything for my sisters baby shower that is today at 3. \u00a0I took the day off of work a few weeks ago, and days off are a precious commodity. \u00a0As you may or may not know Amarillo received a good foot of snow on Thursday resulting in both Ben and I getting the day off! \u00a0Nothing says comfort like chicken noodle soup.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/chickennoodle71.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-3148\" title=\"chickennoodle7\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/chickennoodle71.jpg?resize=400%2C302\" alt=\"\" width=\"400\" height=\"302\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/chickennoodle71.jpg?w=400 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/chickennoodle71.jpg?resize=300%2C226 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/chickennoodle71.jpg?resize=150%2C113 150w\" sizes=\"(max-width: 400px) 100vw, 400px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p><!--more-->There were some very exotic chicken noodle soups out there when I started searching for a recipe. \u00a0One was particularly interesting to me. \u00a0It had all the regular ingredients but also had saffron and corn. \u00a0I almost decided to make that soup, but wanted to do a simple and basic chicken noodle soup. \u00a0So, here it is. \u00a0Basic chicken noodle soup. \u00a0Pure comfort.<\/p>\n<p>This soup is incredibly easy. \u00a0Not including chicken boiling time, this came together in 20 minutes. \u00a0Since I am only making soup for 2, I thought I would use a bit less chicken and broth. \u00a0 \u00a0I increased the carrot, celery and mushrooms because I like a soup that is more full of stuff and not so full of broth.<\/p>\n<p>I used canned chicken broth, but I think you could easily use the water that you use to boil your chicken. \u00a0All you&#8217;d have to do is add some salt, peppercorns and bay leaf. \u00a0I used 4 good sized skinless bone-in chicken breasts and I ended up with leftover chicken that will be made into a tasty chicken salad.<\/p>\n<p>Dinner is served&#8230;<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-3147\" title=\"Soups\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?resize=553%2C415\" alt=\"\" width=\"553\" height=\"415\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?resize=1024%2C768 1024w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?resize=150%2C112 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?resize=400%2C300 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?w=1716 1716w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/01\/Soups.jpg?w=2574 2574w\" sizes=\"(max-width: 553px) 100vw, 553px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Ben said &#8220;This tastes <a href=\"http:\/\/www.youtube.com\/watch?v=Mp2hvM2LL_4\" target=\"_blank\">so fresh and so clean, clean<\/a>.&#8221; \u00a0Get it? \u00a0I have a sweet husband. \u00a0Anyway, the vegetables give so much to the broth. \u00a0It does taste fresh because it IS fresh! \u00a0The mushrooms are great, and I would use more of them next time. \u00a0Another thing I would increase is the broth. \u00a0I ended up adding an extra can for a total of 10 cups. \u00a0I did not give the broth its due credit. \u00a0Use the broth it calls for. \u00a0I was a bit silly in thinking I had better sense than recipe writers. \u00a0I guess 16 cups just sounded like a lot to me. \u00a0There is a reason I teach math and do not write recipes for magazines.<\/p>\n<h5>Chicken Noodle Soup<\/h5>\n<p>Bon Appetit, 1998<\/p>\n<h6>Ingredients<\/h6>\n<ul>\n<li>12-16 cups canned low-salt chicken broth<\/li>\n<li>1 1\/2 to 2 pounds chicken breasts<\/li>\n<li>1\/2 cup chopped onion<\/li>\n<li>3 carrots, peeled, thinly sliced<\/li>\n<li>3 celery stalks, sliced<\/li>\n<li>2 tablespoons (1\/4 stick) butter<\/li>\n<li>1 to 1 1\/2 cups sliced mushrooms<\/li>\n<li>1 tablespoon fresh lemon juice<\/li>\n<li>8 ounces dried wide egg noodles<\/li>\n<li>1\/2 cup finely chopped fresh parsley<\/li>\n<\/ul>\n<h6>Directions<\/h6>\n<ol>\n<li>Combine chicken broth and chicken in heavy large pot. Bring to boil. Reduce heat; cover partially and simmer until chicken is cooked through, about 20 minutes. Using tongs, transfer chicken to large bowl. Cool chicken and broth slightly. Discard skin and bones from chicken. Cut chicken meat into bite-size pieces and reserve. Spoon fat off top of chicken broth.<\/li>\n<li>Return broth to simmer. Add onion, carrots and celery. Simmer until vegetables soften, about 8 minutes.<\/li>\n<li>Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add mushrooms and saut\u00e9 until beginning to brown, about 5 minutes. Stir in lemon juice. Add mushrooms to broth; stir in noodles, parsley and reserved chicken. Simmer until noodles are tender, about 5 minutes.
