\u00a0It was a great chocolate for these cookies; not too sweet and a great complement to the espresso.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/guittard.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-351\" title=\"guittard\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/guittard.jpg?resize=221%2C300\" alt=\"\" width=\"221\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/guittard.jpg?resize=221%2C300 221w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/guittard.jpg?w=1823 1823w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/\/home\/content\/c\/z\/f\/czfoodie\/html\/blog\/wp-content\/uploads\/2008\/11\/guittard.jpg?w=1716 1716w\" sizes=\"(max-width: 221px) 100vw, 221px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>The little flecks in the batter here is actual espresso&#8230;no instant coffee in these cookies! \u00a0I think that makes a real difference in the flavor.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/batter.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-347\" title=\"batter\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/batter.jpg?resize=300%2C225\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/batter.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/\/home\/content\/c\/z\/f\/czfoodie\/html\/blog\/wp-content\/uploads\/2008\/11\/batter.jpg?w=1716 1716w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/\/home\/content\/c\/z\/f\/czfoodie\/html\/blog\/wp-content\/uploads\/2008\/11\/batter.jpg?w=2574 2574w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>After adding the melted chocolate to the batter and stirring in the nuts and chips the batter is thick and sticky. \u00a0It&#8217;s a little messy to drop onto the cookie sheets, but I managed.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/batter2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-348\" title=\"batter2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/batter2.jpg?resize=300%2C225\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/batter2.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/\/home\/content\/c\/z\/f\/czfoodie\/html\/blog\/wp-content\/uploads\/2008\/11\/batter2.jpg?w=1716 1716w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/\/home\/content\/c\/z\/f\/czfoodie\/html\/blog\/wp-content\/uploads\/2008\/11\/batter2.jpg?w=2574 2574w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Once baked these cookies have crisp tops and fudgy centers. \u00a0The crunch of the walnuts and additional chips makes them extra delicious.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/ecookie.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-350\" title=\"ecookie\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/ecookie.jpg?resize=500%2C375\" alt=\"\" width=\"500\" height=\"375\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/ecookie.jpg?w=2477 2477w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2008\/11\/ecookie.jpg?resize=300%2C225 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/\/home\/content\/c\/z\/f\/czfoodie\/html\/blog\/wp-content\/uploads\/2008\/11\/ecookie.jpg?w=1716 1716w\" sizes=\"(max-width: 500px) 100vw, 500px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>3 ounces unsweetened chocolate, chopped<br \/>\n2 cups (12 ounces) semisweet chocolate chips<br \/>\n8 tablespoons unsalted butter, cut into pieces<br \/>\n3 large eggs<br \/>\n1 cup plus 2 tablespoons sugar<br \/>\n2 1\/4 teaspoons finely ground dark-roast coffee beans, such as Italian-roast<br \/>\n3\/4 cup all-purpose flour<br \/>\n1\/3 teaspoon baking powder<br \/>\n1\/4 teaspoon salt<br \/>\n1 cup walnuts<\/p>\n<p>Preheat oven to 350\u00b0F and grease 2 large heavy baking sheets.<\/p>\n<p>In a double boiler or a metal bowl set over a saucepan of barely simmering water melt unsweetened chocolate, 1 cup chocolate chips, and butter, stirring until smooth, and remove top of double boiler or bowl from heat. In a bowl with an electric mixer beat eggs, sugar, and ground coffee on high speed until very thick and pale and mixture forms a ribbon when beaters are lifted, about 3 minutes, and beat in chocolate mixture. Into mixture sift in flour, baking powder, and salt and stir until just combined. Stir in remaining chocolate chips and walnuts.<\/p>\n<p>Drop batter by heaping tablespoons about 2 inches apart onto baking sheets and bake in batched in middle of oven 8 to 10 minutes, or until puffed and cracked on top.
