{"id":3992,"date":"2010-05-13T18:12:18","date_gmt":"2010-05-14T00:12:18","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=3992"},"modified":"2010-05-13T18:12:18","modified_gmt":"2010-05-14T00:12:18","slug":"chocolate-chunk-pudding-cookies","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/05\/13\/chocolate-chunk-pudding-cookies\/","title":{"rendered":"Chocolate Chunk Pudding Cookies"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/05\/puddingcookie1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-3996\" title=\"puddingcookie1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/05\/puddingcookie1.jpg?resize=284%2C286\" alt=\"\" width=\"284\" height=\"286\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/05\/puddingcookie1.jpg?w=355 355w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/05\/puddingcookie1.jpg?resize=150%2C150 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/05\/puddingcookie1.jpg?resize=298%2C300 298w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/05\/puddingcookie1.jpg?resize=149%2C150 149w\" sizes=\"(max-width: 284px) 100vw, 284px\" data-recalc-dims=\"1\" \/><\/a>In college a friend gave me a recipe for chocolate chip cookies that uses pudding mix in the dough resulting in an extra soft and tasty cookie. \u00a0Of course I lost the recipe in one of the 4 moves I&#8217;ve made across Texas in the last 5 years. \u00a0I came across this recipe this past weekend and decided to see if they were like Ashley&#8217;s.<\/p>\n<p>I found the recipe on Kraft foods website. <a href=\"http:\/\/www.kraftrecipes.com\/recipes\/pudding-chocolate-chunk-cookies-51493.aspx?pf=true\" target=\"_blank\"> Here is the link.<\/a><\/p>\n<p>They were not quite the same, but they were good. \u00a0I used some high quality milk and white chocolate in these cookies which made them extra special. \u00a0Good chocolate really does make a difference. \u00a0Chopping off a block of chocolate instead of using chips also makes a difference in the texture of the chocolate in the finished cookie.<\/p>\n<p>I used half butter and half shortening in these, which makes the cookies more sturdy and causes them to spread less, but I will use all butter next time. \u00a0Some cookies can take the half shortening short cut without much of a sacrifice of flavor&#8230;.but not this cookie. \u00a0For some reason they tasted too fake to me and too much like a grocery store cookie instead of a homemade one.<\/p>\n<p>All of that negativity doesn&#8217;t make these cookies at all un-tasty. \u00a0I really liked how soft and chewy they were and absolutely loved the white and milk chocolate chunks. \u00a0Crazy good.<\/p>\n<h6>Chocolate Chunk Pudding Cookies<\/h6>\n<p>Ingredients<\/p>\n<div>\n<div>\n<ul>\n<li>1\/2 cup butter, room temp<\/li>\n<li>1\/2 cup shortening (or butter)<\/li>\n<li>3\/4 cup brown sugar<\/li>\n<li>1\/4 cup white sugar<\/li>\n<li>1 package (3.4 oz) vanilla pudding mix<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>2 eggs<\/li>\n<li>1 taespoon baking soda<\/li>\n<li>2 1\/4 cups flour<\/li>\n<li>6 ounces chopped milk chocolate<\/li>\n<li>4 ounces chopped white chocolate<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div>Directions<\/div>\n<div>\n<ol>\n<li>Heat<strong> <\/strong>oven to 375\u00b0F.<\/li>\n<li>Beat butter, sugars, dry pudding mix and vanilla in large bowl with mixer until blended.<\/li>\n<li>Add eggs and baking soda; mix well.<\/li>\n<li>Gradually add flour, beating after each addition until well blended.<\/li>\n<li>Stir in chocolate.<\/li>\n<li>Drop\u00a0teaspoonfuls of dough, 2 inches apart, onto baking sheets.<\/li>\n<li><strong><span style=\"font-weight: normal;\">Bake<\/span> <\/strong>8 to 10 min. or until golden brown. Cool 3 min. on baking sheets. Remove to wire racks.
