{"id":4131,"date":"2010-06-17T12:20:49","date_gmt":"2010-06-17T18:20:49","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4131"},"modified":"2010-06-17T12:20:49","modified_gmt":"2010-06-17T18:20:49","slug":"caramel-banana-oat-muffins","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/06\/17\/caramel-banana-oat-muffins\/","title":{"rendered":"Caramel Banana Oat Muffins"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/06\/bananamuffin4.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-medium wp-image-4136\" title=\"bananamuffin4\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/06\/bananamuffin4.jpg?resize=300%2C252\" alt=\"\" width=\"300\" height=\"252\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/06\/bananamuffin4.jpg?resize=300%2C252 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/06\/bananamuffin4.jpg?resize=150%2C126 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/06\/bananamuffin4.jpg?w=400 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a>If you are anything like me, when you look in your freezer you might see about a dozen or so frozen black bananas. \u00a0When bananas go bad in my house I either make banana bread if I have the time, or I stick them in the freezer. \u00a0This pile of frozen bananas adds up quickly. \u00a0Before I made these muffins I had 16 frozen bananas!<\/p>\n<p>I pulled out 3 bananas from my stash and made these muffins earlier this week. \u00a0The recipe is from allrecipes.com. \u00a0<a href=\"http:\/\/allrecipes.com\/Recipe\/Banana-Oat-Muffins\/Detail.aspx\" target=\"_blank\">Here is the link.<\/a><\/p>\n<p>To the original recipe I added a cup of caramel pieces and 1 teaspoon of cinnamon. \u00a0I lowered the oven temperature from 400 F to 375 F. \u00a0My batch of muffin batter made more than enough for 12 muffins. \u00a0I was able to make an additional 8 mini muffins, so maybe 16 regular sized muffins total. \u00a0Everything else is just as it is in the original recipe.<\/p>\n<p>The oats add a nice texture, and the caramel pieces bring in some extra delicious sweetness. \u00a0Some of the caramel pieces sunk to the bottom of the muffins, so some of them were hard to remove from the pan. \u00a0Be sure to grease your pan and paper well! \u00a0These muffins are OK at room temperature, but I\u00a0recommend warming them in the microwave or toaster oven.<\/p>\n<h6>Caramel Banana Oat Muffins<\/h6>\n<p>Ingredients<\/p>\n<ul>\n<li>1 1\/2 cups all-purpose flour<\/li>\n<li>1 cup rolled oats<\/li>\n<li>1\/2 cup white sugar<\/li>\n<li>2 teaspoons baking powder<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 teaspoon cinnamon<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1 egg<\/li>\n<li>3\/4 cup milk<\/li>\n<li>1\/3 cup vegetable oil<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<li>1 cup mashed bananas<\/li>\n<li>1 cup caramel pieces<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Combine flour, oats, cinnamon, baking powder, soda, and salt.<\/li>\n<li>In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla, then mix in the sugar.<\/li>\n<li>Add the mashed banana, and combine thoroughly.
