{"id":4259,"date":"2010-07-06T08:37:24","date_gmt":"2010-07-06T14:37:24","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4259"},"modified":"2010-07-06T08:37:24","modified_gmt":"2010-07-06T14:37:24","slug":"toasted-corn-cherry-tomato-and-edamame-salad","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/07\/06\/toasted-corn-cherry-tomato-and-edamame-salad\/","title":{"rendered":"Toasted Corn, Cherry Tomato and Edamame Salad"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/Corn-salad1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-full wp-image-4261\" title=\"Corn-salad1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/Corn-salad1.jpg?resize=318%2C219\" alt=\"\" width=\"318\" height=\"219\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/Corn-salad1.jpg?w=397 397w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/Corn-salad1.jpg?resize=300%2C207 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/Corn-salad1.jpg?resize=150%2C103 150w\" sizes=\"(max-width: 318px) 100vw, 318px\" data-recalc-dims=\"1\" \/><\/a>Finding tasty, refreshing vegetable side dishes can be difficult. \u00a0I am all for a nice salad, but sometimes that just doesn&#8217;t cut it. \u00a0Steamed or roasted veggies are delicious, but when the weather is warm I want something cool. \u00a0This salad is the perfect solution to all these problems! \u00a0Using seasonal ingredients like fresh corn and juicy tomatoes is a great way to celebrate summer. \u00a0The fresh basil and mint in the salad make it even more delicious.<\/p>\n<p>I only made one slight change to this recipe. \u00a0Since I am not a huge fan of drowning a salad in dressing, I simply drizzled the dressing over each individual serving of salad. \u00a0You don&#8217;t need much to add a nice zesty, and tangy flavor to this salad. \u00a0I left one serving completely naked except for a light sprinkling of salt and thought it was great. \u00a0The herbs provide so much flavor alone that you could do without the dressing completely. \u00a0It is up to you.<\/p>\n<p>I served this with Quick Tandoori Chicken, <a href=\"http:\/\/www.finecooking.com\/recipes\/quick-tandoori-chicken-thighs.aspx\">here is the link<\/a>. \u00a0I used chicken breasts instead of thighs. \u00a0The flavors were robust and yummy, but I wouldn&#8217;t serve these two things together again. \u00a0Serving this salad with a simple grilled steak or simple flavored grilled chicken would be wonderful so that you don&#8217;t have competing flavors.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/corn-salad2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4262 alignnone\" title=\"corn-salad2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/corn-salad2.jpg?resize=300%2C227\" alt=\"\" width=\"300\" height=\"227\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/corn-salad2.jpg?w=300 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/corn-salad2.jpg?resize=150%2C113 150w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<h6>Toasted Corn, Cherry Tomato and Edamame Salad<\/h6>\n<p>Courtesy of Fine Cooking (<a href=\"http:\/\/www.finecooking.com\/recipes\/toasted-corn-cherry-tomato-edamame-salad.aspx\" target=\"_blank\">Here is the link<\/a>)<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1 cup frozen shelled edamame<\/li>\n<li>5 Tbs. extra-virgin olive oil<\/li>\n<li>2-1\/4 cups fresh corn kernels (from about 3 medium ears)<\/li>\n<li>2 Tbs. plain low-fat yogurt<\/li>\n<li>2 Tbs. fresh lemon juice<\/li>\n<li>1 tsp. clover honey<\/li>\n<li>1\/2 tsp. minced garlic<\/li>\n<li>Kosher salt<\/li>\n<li>Freshly ground black pepper<\/li>\n<li>1 heaping cup quartered cherry tomatoes (about 15)<\/li>\n<li>1\/4 cup very thinly sliced fresh mint<\/li>\n<li>1\/4 cup very thinly sliced fresh basil<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Cook the edamame according to package directions. Drain and set aside to cool completely.<\/li>\n<li>Heat 1 Tbs. of the oil in a large skillet over medium heat. Add the corn and cook, stirring occasionally, until the kernels are golden brown in patches, about 9 minutes. Transfer to a bowl to cool.<\/li>\n<li>In a small bowl or liquid measuring cup, whisk the yogurt, lemon juice, honey, garlic, and 1\/4 tsp. salt. Slowly pour in the remaining 4 Tbs. olive oil, whisking constantly until blended. Season to taste with salt and pepper.<\/li>\n<li>In a medium serving bowl, combine the cooled edamame and corn, the tomatoes, and the herbs. Gently toss. Add half of the vinaigrette and gently toss. Add more vinaigrette and salt and pepper to taste.
