{"id":4273,"date":"2010-07-09T20:06:23","date_gmt":"2010-07-10T02:06:23","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4273"},"modified":"2010-07-09T20:06:23","modified_gmt":"2010-07-10T02:06:23","slug":"aunt-susans-spinach-or-not-artichoke-dip","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/07\/09\/aunt-susans-spinach-or-not-artichoke-dip\/","title":{"rendered":"Aunt Susan&#8217;s Spinach (or not) Artichoke Dip"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/spinachdip1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-4277\" title=\"spinachdip1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/spinachdip1.jpg?resize=300%2C269\" alt=\"\" width=\"300\" height=\"269\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/spinachdip1.jpg?w=300 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/07\/spinachdip1.jpg?resize=150%2C134 150w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a>My Aunt Susan made this dip a few Christmases ago when we were visiting my mom&#8217;s side of the family in Richvale, California. \u00a0It was so delicious that I just had to get the recipe. \u00a0When she wrote it down for me I was surprised at how short the ingredient list was and how easy it was to put together. \u00a0Those are the best recipes. \u00a0Simple, easy, quick and delicious.<\/p>\n<p>This dip can be made with or without the spinach. \u00a0Susan originally made this without the spinach, but I like it with. \u00a0It makes me feel like I&#8217;m being good to have the spinach in this dip. \u00a0If you use light mayo (or a mixture of plain yogurt and mayo), and low-fat mozzarella this isn&#8217;t the worst dip on the planet. \u00a0Using the spinach just adds to the flavor and adds some extra goodness.<\/p>\n<p>If you decide to use spinach, you can use fresh or frozen. \u00a0I like to use fresh, but sometimes it&#8217;s not the quickest thing to do. \u00a0If you&#8217;re using frozen, thaw it completely then squeeze out as much of the moisture as possible. \u00a0To use fresh, just saute in a pan with a little olive oil and minced garlic.<\/p>\n<p>You can serve it with almost anything;
