{"id":4392,"date":"2010-08-17T10:07:55","date_gmt":"2010-08-17T16:07:55","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4392"},"modified":"2010-08-17T10:07:55","modified_gmt":"2010-08-17T16:07:55","slug":"blueberry-muffins","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/08\/17\/blueberry-muffins\/","title":{"rendered":"Blueberry Muffins"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/martha.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4395 alignleft\" title=\"martha\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/martha.jpg?resize=300%2C300\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/martha.jpg?w=300 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/martha.jpg?resize=150%2C150 150w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a>When I first started to get a little crazy about baking in college I asked for this <a href=\"http:\/\/www.amazon.com\/Martha-Stewarts-Baking-Handbook-Stewart\/dp\/0307236722\" target=\"_blank\">Martha Stewart Baking Handbook <\/a>cookbook for Christmas. \u00a0I used it quite a bit at the beginning as evidenced by the flour crusted on the front cover and bits of food scattered on some of the pages. \u00a0Sadly, I haven&#8217;t used it as much recently.<\/p>\n<p>This is a beautiful book with lovely photos of every single recipe. \u00a0After making these muffins I have a newly rekindled love for this book and for Martha. \u00a0I need to take a break from online recipes and get back to my huge collection of cookbooks. \u00a0Why have them if I&#8217;m not going to use them? \u00a0You might know what I&#8217;m talking about if you have at least 30 cookbooks, many of which are just sittin&#8217; pretty on a bookshelf, and yet you find yourself searching on the internet when you want to make something. \u00a0What a shame! \u00a0Let&#8217;s get back to loving our cookbooks.<\/p>\n<p>Every recipe in this cookbook is great. \u00a0The cinnamon raisin bread is especially delicious and I&#8217;ve made it more than just a few times. \u00a0It was the first yeast bread I tried that worked! \u00a0It has a great cinnamon swirl and lots of juicy raisins. \u00a0I am making myself crave it right now, so I might have to go make a loaf or two&#8230;<\/p>\n<p>The blueberry muffins were easy to prepare and made my house smell delicious while they baked. \u00a0The generous amount of blueberries\u00a0guarantees at least a few juicy berries in every bite. \u00a0I ate these at room temperature and also halved and toasted with a nice spread of butter. \u00a0Either way they are wonderful. \u00a0Watch the muffins after about 20 minutes, because mine were done after 25. \u00a0I did not sprinkle the sugar\/nutmeg mixture on the muffins, but think they would be extra yummy with the nice crunch. \u00a0Enjoy!<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/blueberrymuffin1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4393 alignright\" title=\"blueberrymuffin1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/blueberrymuffin1.jpg?resize=450%2C302\" alt=\"\" width=\"450\" height=\"302\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/blueberrymuffin1.jpg?w=450 450w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/blueberrymuffin1.jpg?resize=300%2C201 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/blueberrymuffin1.jpg?resize=150%2C100 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/08\/blueberrymuffin1.jpg?resize=400%2C268 400w\" sizes=\"(max-width: 450px) 100vw, 450px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<h6>Blueberry Muffins<\/h6>\n<p>Martha Stewart&#8217;s Baking Handbook<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1\/2 cup (1 stick) unsalted butter, room temperature, plus more for pan<\/li>\n<li>2 cups all-purpose flour, plus more for pan<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 cups fresh blueberries<\/li>\n<li>1 cup sugar<\/li>\n<li>2 large eggs<\/li>\n<li>2 teaspoons pure vanilla extract<\/li>\n<li>1\/2 cup milk<\/li>\n<li>\u00bc cup sugar<\/li>\n<li>1\/4 teaspoon nutmeg<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Preheat oven to 375 F. Generously grease and flour a standard 12-cup muffin pan.<\/li>\n<li>In a medium bowl, whisk together flour, baking powder, and salt. Working over the bowl, toss blueberries in a fine sieve with about 1 1\/2 teaspoons flour mixture to lightly coat; set aside the flour mixture and the blueberries.<\/li>\n<li>In the bowl of an electric mixer fitted with the paddle attachment, or using a handheld mixer, beat butter and 1 cup sugar on medium-high speed until light and fluffy, about 3 minutes.<\/li>\n<li>Add eggs, one at a time, beating until combined. Mix in vanilla.<\/li>\n<li>With the mixer on low speed, add reserved flour mixture, beating until just combined.<\/li>\n<li>Add milk, beating until just combined. Do not overmix.<\/li>\n<li>Using a rubber spatula, fold in the blueberries.<\/li>\n<li>Divide batter evenly among the prepared muffin cups.<\/li>\n<li>If desired, in a small bowl, mix together remaining 1\/4 cup sugar and nutmeg. Sprinkle sugar mixture on top of muffin batter.<\/li>\n<li>Bake, rotating pan halfway though, until muffins are golden brown and a cake tester inserted in the center of one muffin comes out clean, about 30 minutes.
