{"id":4493,"date":"2010-11-21T10:41:45","date_gmt":"2010-11-21T16:41:45","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4493"},"modified":"2010-11-21T17:36:19","modified_gmt":"2010-11-21T23:36:19","slug":"apple-cake","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/11\/21\/apple-cake\/","title":{"rendered":"Apple Cake"},"content":{"rendered":"<p>The past week has been a very eventful and exciting one. \u00a0A week ago today, we headed to the hospital to welcome this little guy into the world. \u00a0Despite his surprise arrival eight days early, we could not be happier that he is finally here.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/carson.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4495\" title=\"carson\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/carson.jpg?resize=400%2C268\" alt=\"\" width=\"400\" height=\"268\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/carson.jpg?w=400 400w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/carson.jpg?resize=300%2C201 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/carson.jpg?resize=150%2C100 150w\" sizes=\"(max-width: 400px) 100vw, 400px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Since the arrival of Carson, I haven&#8217;t been doing much cooking or baking. \u00a0Carson was born on Sunday and Ben&#8217;s parents and my mom made it to Amarillo in time to be some of the first to meet him. \u00a0My parents have been here since then and my mom has been making breakfast, lunch and dinner for us as well as cleaning up and doing laundry for me. \u00a0I don&#8217;t know how we&#8217;re going to survive once they leave this afternoon! \u00a0Thankfully Ben&#8217;s parents and Aunt Claire will be here on Tuesday, so we won&#8217;t be on our own for long.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/apple-cake.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-full wp-image-4494\" title=\"apple-cake\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/apple-cake.jpg?resize=372%2C235\" alt=\"\" width=\"372\" height=\"235\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/apple-cake.jpg?w=465 465w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/apple-cake.jpg?resize=300%2C189 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/apple-cake.jpg?resize=150%2C94 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/11\/apple-cake.jpg?resize=400%2C252 400w\" sizes=\"(max-width: 372px) 100vw, 372px\" data-recalc-dims=\"1\" \/><\/a>Last night Patti brought over a pork roast, rolls and gravy; my mom made mashed potatoes and a salad; and my mom and I made this apple cake. \u00a0It was a simple dessert and I&#8217;m planning to make it again for Thanksgiving. \u00a0The ingredient list is short, and there are no special skills required to make this cake&#8230;which is more tart- or pie-like, really. \u00a0I found the recipe <a href=\"http:\/\/awhiskandaspoon.com\/2010\/11\/18\/bolzano-apple-cake\/\" target=\"_blank\">here<\/a> on A Whisk and a Spoon.<\/p>\n<p>We ate the cake with a scoop of Blue Bell vanilla ice cream. \u00a0It was the perfect combination.<\/p>\n<h6>Apple Cake<\/h6>\n<p>Courtesy of A Whisk and a Spoon<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li><em>8 tablespoons (1 stick) unsalted butter, plus more for greasing pan<\/em><\/li>\n<li><em>2 large eggs<\/em><\/li>\n<li><em>1 cup sugar<\/em><\/li>\n<li><em>1 vanilla bean, split, seeds scraped and reserved<\/em><\/li>\n<li><em>1 1\/4 pounds (3 to 4 small to medium) Granny Smith apples<\/em><\/li>\n<li><em>1\/2 cup AP flour, plus mor for dusting the pan<\/em><\/li>\n<li><em>2 teaspoons baking powder<\/em><\/li>\n<li><em>1\/2 cup milk, at room temperature<\/em><\/li>\n<li><em>Powdered sugar for dusting<\/em><\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Heat\u00a0oven to 375 degrees. Line the base of an 8-inch\u00a0springform pan with parchment, then smear with thick layer of butter. Dust with flour; turn pan over and tap lightly to remove excess flour.\u00a0 Melt butter in small saucepan (you can take it a step further and lightly brown it, if you like). Set aside.<\/li>\n<li>Beat together eggs and half the sugar in a bowl (it\u2019s not hard to do by hand). Continue to beat while slowly adding remaining sugar until thick; it should form a ribbon when dropped from a spoon.\u00a0 Add the vanilla seeds to the batter and add the\u00a0pod to the melted butter.<\/li>\n<li>Peel, quarter and core apples, then trim ends and slice thinly.<\/li>\n<li>Remove vanilla pod from butter and stir butter into egg-sugar batter. Combine the flour and baking powder, then stir it into batter alternately with milk. Stir in apples, coating every piece with batter. Pour batter into pan, using fingers to pat top evenly.<\/li>\n<li>Bake for 25 minutes, then rotate pan; bake for about 25 minutes more, until cake pulls away from pan and is brown on top; a thin-bladed knife inserted into center will come out clean when it is done.
