{"id":4503,"date":"2010-12-08T11:03:54","date_gmt":"2010-12-08T17:03:54","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4503"},"modified":"2010-12-08T11:03:54","modified_gmt":"2010-12-08T17:03:54","slug":"coconut-almond-lemon-curd-bars","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/12\/08\/coconut-almond-lemon-curd-bars\/","title":{"rendered":"Coconut &#038; Almond Lemon Curd Bars"},"content":{"rendered":"<p>Since I am kind of a hermit these days as a new mommy, I have been raiding my pantry in search of things I can cook or bake with instead of going to the grocery store. \u00a0I found a jar of lemon curd in there and so I made these bars.<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/lemonbars.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4504\" title=\"lemonbars\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/lemonbars.jpg?resize=500%2C278\" alt=\"\" width=\"500\" height=\"278\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/lemonbars.jpg?w=500 500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/lemonbars.jpg?resize=300%2C166 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/lemonbars.jpg?resize=150%2C83 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/lemonbars.jpg?resize=400%2C222 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>My mom makes the BEST lemon bars, but these were pretty good and different enough not to be a competitor. \u00a0My mom&#8217;s are super simple with a buttery crust topped with a tart lemon filling and dusted with powdered sugar. \u00a0In contrast, these bars have a crumbly almond and coconut topping that makes them a little special.<\/p>\n<p>I found the recipe on allrecipes.com. \u00a0<a href=\"http:\/\/allrecipes.com\/\/Recipe\/lemon-curd-bars\/Detail.aspx\" target=\"_blank\">Here is the link<\/a>. \u00a0The recipe calls for a jar of lemon curd, but I think you could easily use any lemon bar filling as a substitute. \u00a0<a href=\"http:\/\/www.joyofbaking.com\/LemonBars.html\" target=\"_blank\">This basic filling<\/a> would be a good one.<\/p>\n<h6>Lemon Curd Bars<\/h6>\n<p>Ingredients<\/p>\n<ul>\n<li>1 cup unsalted butter<\/li>\n<li>2 cups all-purpose flour<\/li>\n<li>1 cup white sugar<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1 (10 ounce) jar lemon curd<\/li>\n<li>2\/3 cup flaked coconut<\/li>\n<li>1\/2 cup toasted and chopped almonds<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Preheat oven to 375 degrees F.<\/li>\n<li>In a large mixing bowl cream the butter. Add the flour, sugar and baking soda. Mix until the mixture forms coarse crumbs<\/li>\n<li>Pat 2\/3 of the mixture into the bottom of one 9&#215;13 inch baking pan. Bake at 375 degrees F for 10 minutes. Remove and let cool slightly.<\/li>\n<li>Spread the lemon curd over the baked layer. To the remaining 1\/3 of crumb mixture add the coconut and the almonds.
