{"id":4510,"date":"2010-12-16T11:03:10","date_gmt":"2010-12-16T17:03:10","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4510"},"modified":"2010-12-16T11:03:10","modified_gmt":"2010-12-16T17:03:10","slug":"banana-bran-muffins","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2010\/12\/16\/banana-bran-muffins\/","title":{"rendered":"Banana Bran Muffins"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/bananabran.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-4512\" title=\"bananabran\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/bananabran.jpg?resize=491%2C276\" alt=\"\" width=\"491\" height=\"276\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/bananabran.jpg?w=614 614w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/bananabran.jpg?resize=300%2C168 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/bananabran.jpg?resize=150%2C84 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2010\/12\/bananabran.jpg?resize=400%2C224 400w\" sizes=\"(max-width: 491px) 100vw, 491px\" data-recalc-dims=\"1\" \/><\/a>This is the second time around for me and these bran muffins from Ina Garten. \u00a0The first time I made them I followed the recipe exactly&#8230;well, I did leave out the orange zest. \u00a0They were terrific. \u00a0There wasn&#8217;t a real need to change anything. \u00a0You will not be disappointed if you try the original recipe. \u00a0<a href=\"http:\/\/www.foodnetwork.com\/recipes\/ina-garten\/chunky-banana-bran-muffins-recipe\/index.html\" target=\"_blank\">Here is the link.<\/a><\/p>\n<p>I had some blackened bananas that needed to be put to good use, and fast. \u00a0So I decided to try them in these muffins instead of the firmer chopped banana I&#8217;d used the first time. \u00a0Here are the other changes I made.<\/p>\n<ul>\n<li>Added 1 teaspoon of cinnamon to the dry ingredients<\/li>\n<li>Used skim milk (mixed with lemon juice) instead of buttermilk<\/li>\n<li>Used half whole wheat and half AP flour<\/li>\n<li>Used half golden raisins and half regular raisins<\/li>\n<li>Substituted pecans for the walnuts<\/li>\n<li>Used the orange zest<\/li>\n<\/ul>\n<p>The result was yet another yummy bran muffin. \u00a0They do not photograph well though, so I used this photo courtesy of foodtv.com. \u00a0I liked the subtle flavor of the orange zest. \u00a0I definitely like the pecans better than walnuts&#8230;but that&#8217;s just a personal preference. \u00a0The texture was a bit heartier with the wheat flour. \u00a0The skim milk might have made the texture or moistness of the muffins a bit different, but not to a degree that I really noticed. \u00a0The combination of golden and regular raisins is nice, but not necessary. \u00a0I had some extra golden ones left over, so I used them. \u00a0I wouldn&#8217;t buy them just for these muffins as the plain raisins are great.<\/p>\n<p>You can change a lot of things in these muffins to make them your own. \u00a0I would not leave out the banana though since I am sure that gives some necessary moisture. \u00a0Next time I might use cranberries instead of raisins. \u00a0I think that would be nice with the orange flavor, which I might bump up more by using more zest and some orange juice. \u00a0If you think of or try anything else, let me know. \u00a0Enjoy!<\/p>\n<p><!--more--><strong>Banana Bran Muffins<\/strong><\/p>\n<p>Adapted from Chunky Banana Muffins by Ina Garten<\/p>\n<p>Ingredients<\/p>\n<ul>\n<li>1 cup unprocessed wheat bran<\/li>\n<li>1 cup buttermilk<\/li>\n<li>4 tablespoons unsalted butter, at room temperature<\/li>\n<li>\u00bc cup light brown sugar, lightly packed<\/li>\n<li>2 extra-large eggs, at room temperature<\/li>\n<li>6 tablespoons unsulphured molasses<\/li>\n<li>1 teaspoon grated orange zest<\/li>\n<li>\u00bd teaspoon pure vanilla extract<\/li>\n<li>\u00be cup all purpose flour<\/li>\n<li>\u00be cup whole wheat flour<\/li>\n<li>\u00be teaspoon baking powder<\/li>\n<li>\u00bc teaspoon baking soda<\/li>\n<li>1 teaspoon cinnamon<\/li>\n<li>\u00bd teaspoon kosher salt<\/li>\n<li>\u00bd cup raisins<\/li>\n<li>\u00bd cup golden raisins<\/li>\n<li>2 very ripe bananas, mashed<\/li>\n<li>\u00bd cup chopped pecans<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.<\/li>\n<li>Combine the bran and buttermilk and set aside.<\/li>\n<li>Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran\/buttermilk mixture and combine.<\/li>\n<li>In a separate bowl, sift together the flours, baking powder, baking soda, cinnamon and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined.
