{"id":4529,"date":"2011-01-15T14:15:56","date_gmt":"2011-01-15T20:15:56","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4529"},"modified":"2013-11-07T11:00:25","modified_gmt":"2013-11-07T17:00:25","slug":"chicken-chili","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2011\/01\/15\/chicken-chili\/","title":{"rendered":"Chicken Chili"},"content":{"rendered":"<p>A few weeks ago Ben and I decided to invite some friends over to watch Texas A&amp;M play in the Cotton Bowl. \u00a0The game didn&#8217;t turn out the way I would have liked, but this chili exceeded my expectations. \u00a0This photo below of the delicious chili, however, is quite disappointing. \u00a0Sorry.<\/p>\n<p>With the little guy keeping me pretty busy I knew that I had to be really on top of things in order to get the house cleaned and dinner made in time. \u00a0I chopped all my veggies and prepped all that I could the night before while Ben was home. \u00a0This made the cooking process simple and clean up a breeze.<\/p>\n<p>I found this recipe on allrecipes.com. \u00a0<a href=\"http:\/\/allrecipes.com\/\/Recipe\/cha-chas-white-chicken-chili\/Detail.aspx\" target=\"_blank\">Here is the link<\/a>. \u00a0I didn&#8217;t change much. \u00a0I used a rotisserie chicken to further simplify this soup, and I used more green chiles than the original recipe calls for. \u00a0The extra green chiles made it a bit hotter, so use a 4 ounce can if you don&#8217;t want that added heat. \u00a0I also added a chopped red bell pepper in with the onions for more flavor and color. \u00a0We ate left over chili for a few days, and it was even better. \u00a0I like to crush Fritos or blue corn chips and mix them in the chili, then top it with sour cream and cheese. \u00a0Enjoy!<\/p>\n<h5>Chicken Chili<a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/01\/chili.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-full wp-image-4530\" title=\"chili\" alt=\"\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/01\/chili.jpg?resize=300%2C329\" width=\"300\" height=\"329\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/01\/chili.jpg?w=300 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/01\/chili.jpg?resize=273%2C300 273w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/01\/chili.jpg?resize=136%2C150 136w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a><\/h5>\n<p>Ingredients<\/p>\n<ul>\n<li>1 tablespoon vegetable oil<\/li>\n<li>1 onion, chopped<\/li>\n<li>1 red bell pepper, chopped<\/li>\n<li>3 cloves garlic, crushed<\/li>\n<li>1 (4 ounce) can diced jalapeno peppers<\/li>\n<li>1 (7 ounce) can chopped green chile peppers<\/li>\n<li>2 teaspoons ground cumin<\/li>\n<li>1 teaspoon dried oregano<\/li>\n<li>1 teaspoon ground cayenne pepper<\/li>\n<li>2 (14.5 ounce) cans chicken broth<\/li>\n<li>3 cups chopped cooked chicken breast<\/li>\n<li>3 (15 ounce) cans white beans, rinsed and drained<\/li>\n<li>shredded Monterey Jack cheese (or cheddar, or a mix)<\/li>\n<li>sour cream<\/li>\n<li>tortilla or corn chips<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion and red pepper until tender.<\/li>\n<li>Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes.<\/li>\n<li>Mix in the chicken broth, chicken and white beans.
