Ria and Jamie challenged The Daring Bakers to bake a yeasted Meringue Coffee Cake.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/03\/coffeecake.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4573\" title=\"coffeecake\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/03\/coffeecake.jpg?resize=512%2C346\" alt=\"\" width=\"512\" height=\"346\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/03\/coffeecake.jpg?w=512 512w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/03\/coffeecake.jpg?resize=300%2C202 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/03\/coffeecake.jpg?resize=150%2C101 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/03\/coffeecake.jpg?resize=400%2C270 400w\" sizes=\"(max-width: 512px) 100vw, 512px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I managed to get the coffee cake made this week despite the fact that my son has not been a fan of napping for more than 30 minutes at a time. \u00a0At the moment I am trying to get this post written before he wakes up! \u00a0So, forgive me if this one is short and sweet.<\/p>\n<p>The dough wasn&#8217;t too difficult to put together, but even after an hour and a half rise it hadn&#8217;t really doubled in bulk. \u00a0I do not have a great relationship with yeast. \u00a0I added 1\/2 teaspoon of cinnamon and 3\/4 teaspoon of cardamom to the flour mixture.<\/p>\n<p>The filling. \u00a0Oh my goodness. \u00a0The filling. \u00a0How can you argue with this?
