{"id":4684,"date":"2011-07-28T13:04:31","date_gmt":"2011-07-28T19:04:31","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4684"},"modified":"2011-07-28T13:04:31","modified_gmt":"2011-07-28T19:04:31","slug":"mini-turkey-meatloaves","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2011\/07\/28\/mini-turkey-meatloaves\/","title":{"rendered":"Mini Turkey Meatloaves"},"content":{"rendered":"<p>Oh, meatloaf. \u00a0Loved by many, despised by some. \u00a0Or is it the other way around? \u00a0I like meatloaf. \u00a0I always have. \u00a0My mom used to make one in a pie plate that was topped with ketchup and lemon slices and baked in the microwave. \u00a0Yes, the microwave. \u00a0I have very fond memories of that dish.<\/p>\n<p>This turkey meatloaf can be made as one large loaf or 4 mini loaves. \u00a0I chose to do the mini ones so they would cook a bit quicker&#8230;and I like the idea of my own cute personal meatloaf.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/07\/meatloaf.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4685\" title=\"meatloaf\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/07\/meatloaf.jpg?resize=573%2C386\" alt=\"\" width=\"573\" height=\"386\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/07\/meatloaf.jpg?w=573 573w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/07\/meatloaf.jpg?resize=300%2C202 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/07\/meatloaf.jpg?resize=150%2C101 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/07\/meatloaf.jpg?resize=400%2C269 400w\" sizes=\"(max-width: 573px) 100vw, 573px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p><a href=\"http:\/\/www.skinnytaste.com\/2009\/03\/petite-turkey-meatloaves-45-pts.html\" target=\"_blank\">Here is the link<\/a> to the original recipe from skinnytaste.com. \u00a0I used 93\/7 ground turkey, soaked the oats in a few tablespoons of buttermilk for some more moisture, and used a combination of dried thyme, basil, parsley and oregano instead of the marjoram. \u00a0Whatever herbs you like would be good. \u00a0These were tasty. \u00a0I&#8217;ll make them again.<\/p>\n<p>With the leftover loaves I made meatloaf sandwiches the next night. \u00a0You don&#8217;t have to reheat the meat, just toast some whole wheat buns, spread with mayo, slice the meatloaf, layer on the bun and top with dill pickle slices. \u00a0Ben first opted out of the pickles, but after a few bites he decided to give them a chance and said it was much improved. \u00a0Enjoy!<\/p>\n<h3>Mini Turkey Meatloaves<\/h3>\n<p>Adapted from skinnytaste.com<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>1\/2 small onion, chopped<\/li>\n<li>1.3 lb 93% ground turkey<\/li>\n<li>1\/2 cup oatmeal<\/li>\n<li>3 tablespoons buttermilk (or milk)<\/li>\n<li>1\/4 cup ketchup + 2 tbsp<\/li>\n<li>2 tsp Worcestershire sauce<\/li>\n<li>1 large egg<\/li>\n<li>1\/4 to 1\/2 teaspoon each dried thyme, basil, parsley and oregano<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<div><em>Directions<\/em><\/div>\n<div>\n<ol>\n<li>Preheat\u00a0the oven to 350\u00b0.<\/li>\n<li>Soak oatmeal and buttermilk in a small bowl for 5 minutes.<\/li>\n<li>In a medium bowl\u00a0mix\u00a0turkey, onion, oatmeal, egg, ketchup, salt, pepper and herbs.<\/li>\n<li>Divide into four equal loafs and\u00a0place\u00a0each loaf into a non stick mini loaf pan or\u00a0shape\u00a0into small loafs on a cookie sheet lined with non-stick foil or parchment.<\/li>\n<li>In a small cup\u00a0mix\u00a0remaining 2 tbsp ketchup with\u00a0Worcestershire\u00a0sauce and\u00a0brush\u00a0onto each loaf.<\/li>\n<li>Bake\u00a0uncovered for about 40 minutes at 350\u00b0. \u00a0After baking let them sit\u00a0for 5 minutes before serving.<\/li>\n<\/ol>\n<\/div>\n<p>&nbsp;<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2011\/07\/28\/mini-turkey-meatloaves\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Oh, meatloaf. \u00a0Loved by many, despised by some. \u00a0Or is it the other way around? \u00a0I like meatloaf. \u00a0I always have. \u00a0My mom used to make one in a pie plate that was topped with ketchup and lemon slices and baked in the microwave. \u00a0Yes, the microwave. \u00a0I have very fond memories of that dish.
