{"id":4691,"date":"2011-08-10T07:36:20","date_gmt":"2011-08-10T13:36:20","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4691"},"modified":"2011-08-10T07:36:20","modified_gmt":"2011-08-10T13:36:20","slug":"slow-cooker-moroccan-chicken","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2011\/08\/10\/slow-cooker-moroccan-chicken\/","title":{"rendered":"Slow Cooker Moroccan Chicken"},"content":{"rendered":"<p style=\"text-align: center;\">The slow cooker gets a bad rap sometimes. \u00a0But not every meal that comes out of it has to be mediocre or full of cream-of-whatever soups. \u00a0I am currently in search of good crock pot recipes, and while I have had a couple mishaps, some of the meals I&#8217;ve made have been worth repeating. \u00a0This is one of those meals.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/08\/moroccan-chicken.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4693\" title=\"moroccan-chicken\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/08\/moroccan-chicken.jpg?resize=625%2C408\" alt=\"\" width=\"625\" height=\"408\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/08\/moroccan-chicken.jpg?w=625 625w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/08\/moroccan-chicken.jpg?resize=300%2C195 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/08\/moroccan-chicken.jpg?resize=150%2C97 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/08\/moroccan-chicken.jpg?resize=400%2C261 400w\" sizes=\"(max-width: 625px) 100vw, 625px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>The only thing I would do differently with this recipe is to use bone-in chicken instead of boneless chicken breasts. \u00a0I knew that might be an issue, but I wanted to use what I had, and what I had was boneless chicken breasts. \u00a0Our chicken was a tad dry after cooking all day, in my opinion anyway. \u00a0Ben thought it was good, but Ben thinks most of what I make is good&#8230;I think he was just being nice : )<\/p>\n<p>As far as flavor goes, this was a good slow cooker meal. \u00a0The apricots and raisins get nice and plump after soaking up the cooking liquid and add a nice sweetness to the dish. \u00a0The carrots stay\u00a0surprisingly sturdy, not at all mushy, as long as you&#8217;re generous with your cut. \u00a0I sliced them on a bias somewhere between 1\/4 and 1\/2 inch thick. \u00a0A slight change I made was the addition of 2 extra carrots because I like more vegetables. \u00a0The original recipe calls for 2 onions, but since mine was rather large I only used one, and am glad that I did.<\/p>\n<p>The slow cooker bible says DO NOT take the cover off the slow cooker while cooking! \u00a0I disobeyed this rule. \u00a0After about 4 hours of cooking \u00a0I stirred everything up so that the chicken would be covered in more liquid. \u00a0I don&#8217;t know how much of a difference that made.<\/p>\n<p>Served atop the couscous, and sprinkled with the fresh cilantro and pine nuts, this meal is quite tasty. \u00a0The freshly made components make this seem less like your typical slow cooker meal. \u00a0Enjoy!<\/p>\n<h3>Slow Cooker Moroccan Chicken<\/h3>\n<p>Serves 4-6<\/p>\n<p>From <a href=\"http:\/\/www.bhg.com\/recipe\/stews\/moroccan-chicken-stew\/\" target=\"_blank\">Better Homes and Gardens<\/a><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>4-6\u00a0carrots, peeled and sliced<\/li>\n<li>1\u00a0large\u00a0onions, halved and thinly sliced<\/li>\n<li>3\u00a0lb.\u00a0meaty chicken pieces (breast halves, thighs, and drumsticks), skinned<\/li>\n<li>1\/2\u00a0cup\u00a0raisins<\/li>\n<li>1\/2\u00a0cup\u00a0dried apricots, coarsely chopped<\/li>\n<li>1\u00a014-oz. can\u00a0chicken broth<\/li>\n<li>1\/4\u00a0cup\u00a0tomato paste<\/li>\n<li>2\u00a0Tbsp.\u00a0all-purpose flour<\/li>\n<li>2\u00a0Tbsp.\u00a0lemon juice<\/li>\n<li>2\u00a0cloves\u00a0garlic, minced<\/li>\n<li>1-1\/2\u00a0tsp.\u00a0ground cumin<\/li>\n<li>1-1\/2\u00a0tsp.\u00a0ground ginger<\/li>\n<li>1 tsp.\u00a0ground cinnamon<\/li>\n<li>Salt and Pepper<\/li>\n<li>Hot cooked couscous<\/li>\n<li>Pine nuts, toasted<\/li>\n<li>Fresh cilantro, coarsely chopped<\/li>\n<\/ul>\n<div><em>Directions<\/em><\/div>\n<div>\n<ol>\n<li>In a 5- to 6-quart slow cooker place carrots and onions.<\/li>\n<li>Sprinkle chicken with 1\/2 teaspoon salt. Add to cooker; top chicken with raisins and apricots.<\/li>\n<li>In a bowl whisk broth, tomato paste, flour, lemon juice, garlic, cumin, ginger, cinnamon,\u00a0and 3\/4 teaspoon ground black pepper and add to cooker.<\/li>\n<li>Cover; cook on low-heat setting for 6-1\/2 to 7 hours or on high-heat setting for 3-1\/2 to 4 hours.<\/li>\n<li>Serve in bowls with couscous. Sprinkle with nuts.
