{"id":4710,"date":"2011-09-07T15:31:34","date_gmt":"2011-09-07T21:31:34","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4710"},"modified":"2011-09-07T15:34:08","modified_gmt":"2011-09-07T21:34:08","slug":"mini-cornbread-puddings","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2011\/09\/07\/mini-cornbread-puddings\/","title":{"rendered":"Mini Cornbread Puddings"},"content":{"rendered":"<p>In preparing for our move to Houston I am trying to get rid of things. \u00a0I have a stack of old <a href=\"http:\/\/www.marthastewart.com\/everyday-food\" target=\"_blank\">Everyday Food magazines<\/a> that I&#8217;ve kept on a bookshelf for years, but haven&#8217;t used them for recipes in quite some time. \u00a0I decided to go through them, rip out recipes I could see myself making (or have made before), and then throw the rest away. \u00a0This recipe for mini cornbread puddings came from one of the many pages torn from one of those magazines.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/09\/cornbreadpuddings.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4711\" title=\"cornbreadpuddings\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/09\/cornbreadpuddings.jpg?resize=567%2C454\" alt=\"\" width=\"567\" height=\"454\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/09\/cornbreadpuddings.jpg?w=567 567w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/09\/cornbreadpuddings.jpg?resize=300%2C240 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/09\/cornbreadpuddings.jpg?resize=150%2C120 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2011\/09\/cornbreadpuddings.jpg?resize=400%2C320 400w\" sizes=\"(max-width: 567px) 100vw, 567px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>They were a cinch to prepare, a little tough to remove from from the pan (despite being greased) and a pleasure to eat, warm and at room temperature the next day. \u00a0They could maybe use a kick from some cayenne pepper, chopped jalapenos or green chiles. \u00a0These little treats are much more \u00a0moist than your regular corn muffin, and I am sure could be done in a regular sized 12-cup muffin tin with some changes in cooking time and temperature.<\/p>\n<h3>Mini Cornbread Puddings<\/h3>\n<p>Courtesy of Martha Stewart <em>Everyday Food\u00a0<\/em><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>1\/2 cup all-purpose flour, (spooned and leveled)<\/li>\n<li>1\/2 cup yellow cornmeal<\/li>\n<li>2 tablespoons sugar<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1\/4 teaspoon baking soda<\/li>\n<li>1 large egg<\/li>\n<li>1 1\/2 cups sour cream<\/li>\n<li>1 package (10 ounces) frozen corn kernels, thawed and patted dry<\/li>\n<\/ul>\n<div><em>Directions<\/em><\/div>\n<div>\n<ol>\n<li>Preheat oven to 425 degrees, with rack in upper third. Butter 24 mini muffin cups; set aside. In a medium bowl, whisk together flour, cornmeal, sugar, baking powder, salt, and baking soda.<\/li>\n<li>Make a well in center of flour mixture. In well, whisk together egg, sour cream, and corn. Mix with flour mixture just until incorporated (do not overmix).<\/li>\n<li>Dividing evenly, spoon batter into prepared muffin pan. Bake until tops have browned and a toothpick inserted in the center of a muffin comes out clean, 10 to 15 minutes. Let stand 5 minutes in pan; turn out onto a cooling rack.
