{"id":4736,"date":"2012-01-05T08:57:10","date_gmt":"2012-01-05T14:57:10","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4736"},"modified":"2012-01-05T08:57:10","modified_gmt":"2012-01-05T14:57:10","slug":"chicken-with-roasted-red-pepper-sauce","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2012\/01\/05\/chicken-with-roasted-red-pepper-sauce\/","title":{"rendered":"Chicken with Roasted Red Pepper Sauce"},"content":{"rendered":"<p>I haven&#8217;t been making meals at home much lately. \u00a0Lots of taking out, going out, vacation foods and eating holiday meals. \u00a0I&#8217;m trying to get back into meal planning, buying groceries for the week and hopefully feeling better. \u00a0We need to make the change from restaurant fare to home cooked meals. \u00a0That is my resolution for the New Year. \u00a0Just eat better. \u00a0I&#8217;m not going to be unrealistic and say I&#8217;m going to lose 10 pounds or run a marathon. \u00a0Who wants to set themselves up for disappointment?<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/01\/redpepperchicken.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4737\" title=\"redpepperchicken\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/01\/redpepperchicken.jpg?resize=575%2C391\" alt=\"\" width=\"575\" height=\"391\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/01\/redpepperchicken.jpg?w=575 575w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/01\/redpepperchicken.jpg?resize=300%2C204 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/01\/redpepperchicken.jpg?resize=150%2C102 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/01\/redpepperchicken.jpg?resize=400%2C272 400w\" sizes=\"(max-width: 575px) 100vw, 575px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>This recipe is from a cookbook my mother-in-law gave me a few years ago called <a href=\"http:\/\/www.amazon.com\/Twenty-Minute-Chicken-Dishes-Easy-Prepare\/dp\/0809240335\" target=\"_blank\">&#8220;Twenty Minute Chicken Dishes&#8221;.<\/a>\u00a0 If I had made this meal in one sitting, I think I would have been able to do it in twenty minutes. \u00a0But with a little guy around, I had to find a way to do some prep beforehand. \u00a0I made the sauce in a mini food processor (something I love having around), and kept in the fridge all day. \u00a0So all I had to do once we were ready to eat was pound the chicken out, cook it for 5 minutes per side, then warm up the sauce. \u00a0Easy.<\/p>\n<p>Pouring this yummy sauce over chicken is but one of the many ways to use it. \u00a0It has great roasted pepper flavor, a nice creamy texture (without using any cream) and I think it would be great on beef, fish, vegetables and pasta as well.<\/p>\n<p>This recipe serves 2 with some sauce leftover, probably enough for 2 more chicken breasts. \u00a0The sauce could easily be doubled, but I&#8217;m not sure if you could freeze it since it contains sour cream. \u00a0If you want to freeze the sauce, puree it without the sour cream, then add it in after thawing.<\/p>\n<h3>Roasted Red Pepper Sauce<\/h3>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>2 boneless, skinless chicken breasts<\/li>\n<li>salt and pepper<\/li>\n<li>1-2 tablespoons butter and 1-2 tablespoons olive oil<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 12-ounce jar roasted red (or red and yellow) peppers, drained and patted dry<\/li>\n<li>1\/4 cup light sour cream<\/li>\n<li>2 tablespoons salsa (I used <a href=\"http:\/\/www.mcssl.com\/store\/8fc8d621264f43828dc0bf0dbe03ef\/arriba-southwest-style-salsas\/arriba-16-oz-garlic-cilantro-salsa\" target=\"_blank\">Arriba Garlic and Cilantro<\/a>)<\/li>\n<li>1 tablespoon flour<\/li>\n<li>2 tablespoons freshly chopped basil, cilantro or parsley (optional)<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Make sauce: Combine peppers, salsa, sour cream, flour, and 1\/4 teaspoon salt in food processor or blender. \u00a0Blend until smooth. Set aside (or refrigerate for up to 2 days).<\/li>\n<li>Pound chicken to 1\/2 inch thickness.
