{"id":4834,"date":"2012-03-23T08:31:13","date_gmt":"2012-03-23T14:31:13","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4834"},"modified":"2012-03-23T08:31:13","modified_gmt":"2012-03-23T14:31:13","slug":"slow-cooker-chicken-tikka-masala","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2012\/03\/23\/slow-cooker-chicken-tikka-masala\/","title":{"rendered":"Slow Cooker Chicken Tikka Masala"},"content":{"rendered":"<p>It is hard to cook for two. \u00a0This meal was yet another reminder of that fact. \u00a0After the two of us had one big (for Ben) and two small (for me) servings of this chicken tikka, it didn&#8217;t look like we&#8217;d even touched the stuff. \u00a0We will be eating this for <em>days, <\/em>and I mean that in a very good way.\u00a0 I really enjoyed this and have had no problem eating it as leftovers. \u00a0Make sure to leave the jalapeno in with whatever you need to refrigerate. \u00a0This tastes even better the next day.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/03\/chickentikka2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-4836\" title=\"chickentikka2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/03\/chickentikka2.jpg?resize=620%2C406\" alt=\"\" width=\"620\" height=\"406\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/03\/chickentikka2.jpg?w=775 775w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/03\/chickentikka2.jpg?resize=300%2C196 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/03\/chickentikka2.jpg?resize=150%2C98 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/03\/chickentikka2.jpg?resize=400%2C261 400w\" sizes=\"(max-width: 620px) 100vw, 620px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>This recipe is from Tasty Kitchen. \u00a0I used 4 boneless skinless chicken breasts and will use 5 or 6 next time to\u00a0accommodate for the large amount of\u00a0yummy sauce. \u00a0The original recipe says that it serves 6, but I think it could easily serve 8.<\/p>\n<p>I couldn&#8217;t find garam masala, so I made my own. \u00a0If you have a grocery store that sells spices in bulk I would recommend buying some of these spices that you don&#8217;t use very often in smaller amounts to cut the cost a bit. \u00a0I had a jar of ground cardamom already, but a new jar was going to set me back $9.00 so I&#8217;m glad I had it. \u00a0This is what I used for the garam masala. \u00a0It was exactly 3 tablespoons, so it&#8217;s perfect for this recipe.<\/p>\n<h3>Garam Masala<\/h3>\n<p>Mix together the following spices. \u00a0Use or store in a sealed container.<\/p>\n<ul>\n<li>1 tablespoon ground cumin<\/li>\n<li>1 1\/2 teaspoons ground coriander<\/li>\n<li>1 1\/2 teaspoons ground cardamom<\/li>\n<li>1 1\/2 teaspoons ground pepper<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>1\/2 teaspoon ground cloves<\/li>\n<li>1\/2 teaspoon ground nutmeg<\/li>\n<\/ul>\n<p>The only thing I didn&#8217;t enjoy about making this meal was all the ginger I had to grate. \u00a0I do love fresh ginger, and so there was no way I was going to use less than it called for. \u00a0But peeling and grating a 3 inch piece of ginger is not a task I took forward to repeating. \u00a0But since I will be making this again, I will be peeling and grating all that ginger yet again. \u00a0You can finely chop it, but I think grating it in this recipe is a better choice because then you don&#8217;t get little pieces of ginger. \u00a0If you don&#8217;t have a microplane grater, chop it as finely as you can. \u00a0If you do grate it, watch your fingertips! \u00a0Those graters are sharp.<\/p>\n<p>Other than using chicken breasts and making my own garam masala, I followed this recipe exactly. \u00a0I do think you could use less cream at the end, maybe 3\/4 of a cup. \u00a0But I wouldn&#8217;t eliminate it completely.<\/p>\n<p>I served this with white rice, green peas and <a title=\"Easy Pita Bread\" href=\"http:\/\/www.hottie-biscotti.com\/blog\/2012\/03\/21\/easy-pita-bread\/\" target=\"_blank\">these pita bread<\/a>. \u00a0Choose just one starch if you&#8217;d like, but make sure you have at least one of them to soak up the sauce. \u00a0It is delicious.<\/p>\n<h3>Slow Cooker Chicken Tikka Masala<\/h3>\n<p>From <a href=\"http:\/\/tastykitchen.com\/blog\/2011\/10\/slow-cooker-chicken-tikka-masala\/\" target=\"_blank\">The Tasty Kitchen<\/a><\/p>\n<p><em>Ingredients<\/em><\/p>\n<p>Chicken<\/p>\n<ul>\n<li>9 whole\u00a0Boneless, Skinless Chicken Thighs<\/li>\n<li>1 Tablespoon\u00a0Ground Coriander<\/li>\n<li>1 Tablespoon\u00a0Ground Cumin<\/li>\n<li>1 teaspoon\u00a0Kosher Salt<\/li>\n<li>1 cup\u00a0Yogurt<\/li>\n<li>3-4 Tablespoons\u00a0Butter<\/li>\n<li>1 whole\u00a0Jalapeno Pepper, Stem Removed, Pepper Pierced Several Times With A Sharp Knife<\/li>\n<\/ul>\n<div>Sauce<\/div>\n<ul>\n<li>4 Tablespoons\u00a0Butter<\/li>\n<li>1 whole\u00a0Large Onion, Peeled And Diced<\/li>\n<li>6 cloves\u00a0Garlic, Peeled And Minced<\/li>\n<li>1 Tablespoon\u00a0Kosher Salt<\/li>\n<li>3 Tablespoons\u00a0Garam Masala<\/li>\n<li>1 piece\u00a0Fresh Ginger, About 2-3 Inches, Peeled And Grated<\/li>\n<li>4 cups\u00a0Crushed Tomatoes<\/li>\n<li>1 Tablespoon\u00a0Raw Sugar (can Substitute White Granulated If Necessary)<\/li>\n<li>2 teaspoons\u00a0Cornstarch Or Cleargel<\/li>\n<li>1-\u00bd cup\u00a0Heavy Cream<\/li>\n<\/ul>\n<div>Serving<\/div>\n<ul>\n<li>Hot Buttered Rice And Peas<\/li>\n<li>Chopped Fresh Cilantro<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Cut the chicken into 1- 1 1\/2 inch pieces. Sprinkle the coriander, cumin and salt over the chicken, then stir in the yogurt until all the pieces are evenly coated. Cover lightly and let sit for 10 minutes before proceeding.<\/li>\n<li>Melt 1 tablespoon the butter in a large saute pan over medium heat. Raise the heat to medium high and quickly brown about 1\/4 to 1\/3 of the chicken. Transfer browned chicken to the slow cooker as it is finished, using 1 tablespoon of butter per batch, and repeat until the chicken is all in the slow-cooker. Throw the pierced jalapeno in on top of the chicken.<\/li>\n<li>Prepare the sauce. Return the pan to the heat and melt the butter over medium high heat. Add the onions, garlic, and kosher salt, then stir. Cook, stirring frequently, until the onions begin to lightly brown around the edges.<\/li>\n<li>Stir in the garam masala and ginger and cook until fragrant (about 1 minute) before raising the heat to high and adding the crushed tomatoes and raw sugar. Stir well, scraping the caramelized bits from the bottom of the pan, and bring to a boil. Pour over the chicken in the slow-cooker.<\/li>\n<li>Cover and cook on LOW for 5 hours, or until the chicken is very tender.<\/li>\n<li>Use a fork or whisk to stir the cornstarch or cleargel into the heavy cream until smooth. Pour into the slow-cooker and stir gently until the colour is even.
