\u00a0Big deal. \u00a0I don&#8217;t care a whole lot about stuff like this. \u00a0I am not a vegetarian, much less a vegan, though there are times I cook vegetarian meals or order a vegetarian pizza, with extra cheese, please. \u00a0I don&#8217;t worry about soy, or oil, or gluten, or wheat. \u00a0I do not make stuff like this. \u00a0Ever. \u00a0But I did today. \u00a0And&#8230;I liked it.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/kalesalad1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-4888\" title=\"kalesalad1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/kalesalad1.jpg?resize=710%2C471\" alt=\"\" width=\"710\" height=\"471\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/kalesalad1.jpg?w=789 789w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/kalesalad1.jpg?resize=300%2C198 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/kalesalad1.jpg?resize=150%2C99 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/kalesalad1.jpg?resize=400%2C265 400w\" sizes=\"(max-width: 710px) 100vw, 710px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Some time in the last year I started following this blog, <a href=\"http:\/\/www.eatingbirdfood.com\/2012\/04\/let-them-eat-vegan-kale-slaw-recipe-review-and-giveway\/\" target=\"_blank\">Eating Bird Food<\/a>. \u00a0No doubt this was one of those stages when I told myself that I would start eating better. \u00a0I don&#8217;t eat poorly, but I also don&#8217;t make &#8220;health&#8221; food a big priority in my life. \u00a0I definitely do not worry about wheat and gluten, and thankfully I don&#8217;t have some allergy that requires me to. \u00a0I eat stuff that tastes good and makes me feel good. \u00a0Though I have been known to eat too much of the &#8220;tastes good&#8221; (darn you<a href=\"http:\/\/www.candyblog.net\/blog\/item\/cadbury_mini_eggs\" target=\"_blank\"> Cabdury Mini Eggs<\/a>!) and then I have less of the &#8220;feel good&#8221;.<\/p>\n<p>So, why did I even make this salad if I am not into food like this? \u00a0It just sounded really yummy. \u00a0So I made it. \u00a0And it <em>was<\/em> yummy. \u00a0It made for a nice, fresh, lunch that left me feeling really good. \u00a0I might even consider making it again. \u00a0The dressing is creamy and nutty and has a nice flavor from the ginger and curry. \u00a0The vegetables are perfect together and different enough in flavor and texture to be interesting. \u00a0The sweet apples and cranberries are a perfect contrast to the rest of the savory flavors. \u00a0The fennel is genius. \u00a0Make sure it is sliced as thin as you can get it. \u00a0Raw fennel can be overpowering if the pieces are too big.<\/p>\n<p>Dressed salads do not typically hold up overnight. \u00a0This one was still crunchy and delicious after 24 hours in the fridge, so I was able to make lunch out of it 2 days in a row! \u00a0Crossing my fingers about tomorrow! \u00a0If you wanted to have it all week, just dress each individual serving when you want it to avoid soggy salad.<\/p>\n<p>The recipe for this salad is from the cookbook\u00a0<a href=\"http:\/\/www.amazon.com\/Let-Them-Eat-Vegan-Plant-Powered\/dp\/0738215619\" target=\"_blank\">Let Them Eat Vegan!<\/a>\u00a0 and was posted on Eating Bird Food this week. \u00a0She&#8217;s made and reviewed some other recipes from the book, and they all look pretty tasty. \u00a0I&#8217;m not about to give up my cheese, beef and bacon, but I have been convinced that eating vegan isn&#8217;t disgusting!
