{"id":4906,"date":"2012-05-21T09:01:40","date_gmt":"2012-05-21T15:01:40","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4906"},"modified":"2012-05-21T09:01:40","modified_gmt":"2012-05-21T15:01:40","slug":"thyme-and-brown-butter-roasted-potatoes","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2012\/05\/21\/thyme-and-brown-butter-roasted-potatoes\/","title":{"rendered":"Thyme and Brown Butter Roasted Potatoes"},"content":{"rendered":"<p>It is grilling season, and we&#8217;ve been taking full advantage of it on the weekends. \u00a0We had dinner from the grill both Saturday and Sunday night. \u00a0Last night we even ate outside. \u00a0It was wonderful. \u00a0I love this time of year.<\/p>\n<p>Saturday night Ben grilled steaks, I made these potatoes and a green salad. \u00a0If we ate this every night of the week Ben would be the happiest man on earth. \u00a0Around 5 that afternoon my plan for a side dish went about as far as potatoes, but I didn&#8217;t know exactly what I wanted to do with them. \u00a0Mashed is always a good choice to accompany steak, but I didn&#8217;t feel like something loaded with butter and cream. \u00a0So we had roasted potatoes that had been tossed with brown butter and fresh thyme. \u00a0Ben said, &#8220;We need to have this meal again.&#8221; \u00a0I think we will.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/potatoes2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4908 aligncenter\" title=\"potatoes2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/potatoes2.jpg?resize=686%2C456\" alt=\"\" width=\"686\" height=\"456\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/potatoes2.jpg?w=686 686w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/potatoes2.jpg?resize=300%2C199 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/potatoes2.jpg?resize=150%2C99 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/potatoes2.jpg?resize=400%2C265 400w\" sizes=\"(max-width: 686px) 100vw, 686px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>When garlic cooks and gets nice and brown it is spectacular and crunchy. \u00a0When garlic burns, it turns bitter. \u00a0I burned my garlic. \u00a0So next time I would throw the garlic in with the potatoes when they had about 20 minutes left instead of at the beginning.<\/p>\n<h3>Thyme and Brown Butter Roasted Potatoes<\/h3>\n<p>Serves 4<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>2 russet potatoes, scrubbed and cut into 1-inch cubes<\/li>\n<li>3 tablespoons butter<\/li>\n<li>1 tablespoon fresh thyme leaves<\/li>\n<li>4-5 garlic cloves, minced<\/li>\n<li>1 teaspoon salt<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Brown butter in a small saucepan over medium heat. \u00a0Watch it closely and swirl the pan periodically to keep it from burning.<\/li>\n<li>Combine warm butter, thyme and salt in a large bowl. \u00a0Add in the potatoes and toss to coat.<\/li>\n<li>Pour potatoes onto a rimmed baking sheet lined with foil or parchment (I used Reynolds parchment\/foil pan liner with great results).<\/li>\n<li>Bake at 400\u00b0F for 40-45 minutes, stirring the potatoes around so that all sides can get nicely browned every 15-20 minutes. \u00a0Toss garlic with potatoes when they have about 20 minutes left to cook.<\/li>\n<li>Let cool on the sheet for a few minutes, then serve.<\/li>\n<\/ol>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2012\/05\/21\/thyme-and-brown-butter-roasted-potatoes\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>It is grilling season, and we&#8217;ve been taking full advantage of it on the weekends. \u00a0We had dinner from the grill both Saturday and Sunday night. \u00a0Last night we even ate outside. \u00a0It was wonderful. \u00a0I love this time of year.
