{"id":4910,"date":"2012-05-22T08:48:11","date_gmt":"2012-05-22T14:48:11","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4910"},"modified":"2012-05-22T08:48:11","modified_gmt":"2012-05-22T14:48:11","slug":"lemon-cream-pie","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2012\/05\/22\/lemon-cream-pie\/","title":{"rendered":"Lemon Cream Pie"},"content":{"rendered":"<p>There is absolutely nothing wrong with this lemon cream pie. \u00a0Nothing at all. \u00a0Simple flavors, creamy filling, slightly tart and slightly sweet with a crunchy, buttery crust. \u00a0There is one lone slice left in the fridge and I am tempted to eat it for breakfast. \u00a0It can&#8217;t be any worse than a donut, right?<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4911\" title=\"lemonpie1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie1.jpg?resize=656%2C467\" alt=\"\" width=\"656\" height=\"467\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie1.jpg?w=656 656w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie1.jpg?resize=300%2C213 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie1.jpg?resize=150%2C106 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie1.jpg?resize=400%2C284 400w\" sizes=\"(max-width: 656px) 100vw, 656px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>This came about at the last minute the other night when some sweet friends brought dinner for us after I&#8217;d been out of town all week. \u00a0Since they were bringing everything, I said I&#8217;d make something for dessert. \u00a0It was 5 o&#8217;clock. \u00a0As fate would have it, I had everything I needed for this pie, including a box of <a href=\"http:\/\/www.midelcookies.com\/products\/all-natural\/honey-grahams\" target=\"_blank\">Mi-Del graham crackers<\/a> that, in my opinion, took this pie to a place it would never have gone with a box of Honey Maid. \u00a0They&#8217;re more substantial in texture and flavor and provided a great base for the pie.<\/p>\n<p>I started this pie at 5 and we ate it at 8. \u00a0With 2 hours of that being chilling time this pie is pretty quick and easy. \u00a0And there isn&#8217;t really an hour of active time since cooling time for the crust and pie is factored into the hour. \u00a0What I&#8217;m saying is that if you&#8217;re in a time crunch and want to give something more impressive than a box of Oreos to dinner guests, make this pie.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-4912\" title=\"lemonpie2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie2.jpg?resize=489%2C410\" alt=\"\" width=\"489\" height=\"410\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie2.jpg?w=611 611w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie2.jpg?resize=300%2C251 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie2.jpg?resize=150%2C125 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/05\/lemonpie2.jpg?resize=400%2C335 400w\" sizes=\"(max-width: 489px) 100vw, 489px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<h3>Lemon Cream Pie<\/h3>\n<p>From<a href=\"http:\/\/www.realsimple.com\/food-recipes\/browse-all-recipes\/lemon-pie-00100000077198\/index.html\" target=\"_blank\"> Real Simple<\/a><\/p>\n<p>Serves 8-10<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>9\u00a0ounces graham crackers<\/li>\n<li>6\u00a0tablespoons\u00a0unsalted butter, melted<\/li>\n<li>2\u00a0tablespoons\u00a0granulated sugar<\/li>\n<li>1\u00a0teaspoon\u00a0kosher salt<\/li>\n<li>2 eggs<\/li>\n<li>1\u00a014-ounce can sweetened condensed milk<\/li>\n<li>1\u00a0tablespoon lemon zest<\/li>\n<li>1\/2 cup lemon juice (I didn&#8217;t get quite this much from the lemons I had, so no worries if you have the same problem)<\/li>\n<li>1 1\/2 cups whipped cream<\/li>\n<li>1 tablespoon powdered sugar<\/li>\n<li>1 teaspoon vanilla<\/li>\n<li>1\/2 teaspoon almond extract<\/li>\n<\/ul>\n<div><em>Directions<\/em><\/div>\n<ol>\n<li>\u00a0Heat oven to 350\u00b0 F.<\/li>\n<li>\u00a0In a food processor, process the graham crackers until fine crumbs form. Add the butter, granulated sugar, and \u00bd teaspoon of the salt and pulse until moistened.<\/li>\n<li>Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate, using a straight-sided dry measuring cup to help.<\/li>\n<li>Place on a rimmed baking sheet and bake until the edges are dry and set, 16 to 18 minutes. \u00a0Let cool.<\/li>\n<li>In a medium bowl, whisk together the eggs, condensed milk, lemon zest and juice, and the remaining \u00bd teaspoon of salt.<\/li>\n<li>\u00a0Pour the mixture into the crust and bake until set in the center, 18 to 20 minutes. Let cool and then refrigerate until firm, at least 2 hours.<\/li>\n<li>Using an electric mixer, whip the cream, confectioners\u2019 sugar and extracts on medium until soft peaks form, 2 to 3 minutes.
