and Rice Casserole with Roasted Squash and Spinach"},"content":{"rendered":"<p>We&#8217;re moving in 12 days! \u00a0I&#8217;m starting to wonder why we thought moving 7 weeks before my due date was a good plan! \u00a0I&#8217;m actually very excited, just anxious and stressing a bit. \u00a0My sweet mom came down and helped me for a few days last week. \u00a0We didn&#8217;t pack the entire kitchen, but that process is beginning. \u00a0I plan to have the kitchen pretty much packed away by the beginning of next week. \u00a0That last week I plan to eat easy breakfasts, freezer meals, give Carson a lot of\u00a0convenience\u00a0foods (and his weight in strawberries of course) and explore the take-out situation in our neighborhood. \u00a0I&#8217;ve already stocked up on paper plates, plastic utensils and cups. \u00a0I don&#8217;t want to find myself packing plates and silverware at 2 am the night before we move.<\/p>\n<p>Eating restaurant food is probably going to get old after a few days. \u00a0I like cooking and knowing what goes into our meals. \u00a0So I want to cook a lot in the coming week. \u00a0The problem with that is how unprepared I have been recently when it comes to groceries. \u00a0And if I&#8217;ve forgotten something, I have little to no desire to take Carson to the store for one item. \u00a0One night last week I made dinner with what we had around, which was an adventure. \u00a0And a pretty tasty adventure. \u00a0So tasty, in fact, that I typed this recipe up right after we ate so that I wouldn&#8217;t forget it. \u00a0The picture doesn&#8217;t do it justice, but casseroles in general are just plain unattractive.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/07\/chickenandricecasserole.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4948\" title=\"chickenandricecasserole\" \/><\/a><\/p>\n<p>I made fried chicken earlier in the week. \u00a0Since 2 people can&#8217;t (and shouldn&#8217;t) eat an entire chicken we had quite a bit left over. \u00a0My thought for dinner began with that chicken. \u00a0I knew we had rice, but I couldn&#8217;t think of what else I was going to throw in my chicken and rice dinner. \u00a0So began the\u00a0scavenging. \u00a0Squash from Farmhouse. \u00a0A shallot. \u00a0Green onions. \u00a0A half bag of spinach. \u00a0The remains of a box of chicken broth. \u00a0The rest of a carton of sour cream. \u00a0Leftover white cheddar cheese. \u00a0And a packet of Lipton chicken noodle soup mix. \u00a0This was going to be dinner. \u00a0The biggest gamble was the squash. \u00a0I roasted it and figured if I didn&#8217;t end up using it in the casserole I could snack on it and give some to Carson. \u00a0It ended up being really great and something I would definitely repeat.<\/p>\n<h3>Chicken and Rice Casserole with Roasted Squash and Spinach<\/h3>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>2-3 cups 1\/2 inch cubed squash (I used patty pan and butternut)<\/li>\n<li>1 shallot, chopped<\/li>\n<li>6 green onions, chopped<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>4-6 ounces fresh spinach<\/li>\n<li>1 cup white medium grain rice<\/li>\n<li>1 1\/2 cups chicken broth<\/li>\n<li>1 package Lipton chicken \u00a0noodle soup mix<\/li>\n<li>1\/2 cup sour cream<\/li>\n<li>1\/4 cup milk<\/li>\n<li>1\/4-1\/2 cup shredded white cheddar cheese (optional but delicious)<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Roast Squash: \u00a0Preheat oven to 400\u00b0F. \u00a0Toss seeded and cubed squash with a drizzle of olive oil and a sprinkle of salt. \u00a0Spread on a rimmed baking sheet and roast for 20-30 minutes, tossing about halfway through. \u00a0Set aside.<\/li>\n<li>Heat 1\/2 tablespoon of olive oil and 1\/2 tablespoon of butter over medium heat in a large skillet. \u00a0Once hot, add in shallot and cook for 2 minutes, add in green onion and cook 2 minutes, then add in garlic, stir and cook for about 1 minute.<\/li>\n<li>Stir in the rice, stir and cook for 2-3 minutes. \u00a0Add in the spinach and cook until slightly wilted. \u00a0Turn off the heat and mix in the chicken and roasted squash.<\/li>\n<li>Pour in the chicken broth, soup mix, sour cream and milk. \u00a0Stir until well combined.<\/li>\n<li>Reduce oven temperature to 375\u00b0F. \u00a0Pour into a greased 9&#215;13 pan and sprinkle with the cheese, if using.<\/li>\n<li>Cover tightly with foil and bake for 40 minutes. \u00a0Remove foil and bake for 10 more minutes. \u00a0Let cool slightly before serving.<\/li>\n<\/ol>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script
