{"id":4953,"date":"2012-10-26T08:33:06","date_gmt":"2012-10-26T14:33:06","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=4953"},"modified":"2012-10-26T08:33:06","modified_gmt":"2012-10-26T14:33:06","slug":"beef-bean-and-beer-chili-for-frito-pie","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2012\/10\/26\/beef-bean-and-beer-chili-for-frito-pie\/","title":{"rendered":"Beef, Bean and Beer Chili for Frito Pie"},"content":{"rendered":"<p>Goodness, blogging has certainly taken a back seat to mothering lately! \u00a0As it should, of course. \u00a0I kind of feel like I&#8217;ve fallen off the face of the earth in some ways, though. \u00a0I am beat. \u00a0I have permanent dark circles under my eyes and I can&#8217;t always form complete and comprehensible thoughts. \u00a0I almost always feel foggy headed. \u00a0And I hear this doesn&#8217;t get any better as your children get older&#8230;<\/p>\n<p>Baby Betsy is 7 weeks old now and we are all alive, which is really saying something. \u00a0If you want more details, then <a href=\"http:\/\/babyz.hottie-biscotti.com\/2012\/10\/06\/betsy-1-month\/\" target=\"_blank\">check this out<\/a>. \u00a0We love our sweet girl and are so very blessed to have our two beautiful and healthy babies.<\/p>\n<p>A few weeks ago we had a group of friends and family at our house to watch an Aggie game. \u00a0We&#8217;d planned on grilling, but with rain chances that day being 100% we decided to make chili and have Frito pie instead. \u00a0It ended up only raining in the morning, so we could have grilled, but I am glad we changed our plans. \u00a0Chili and football just go together, don&#8217;t you think? \u00a0Now if only we could have a football Saturday under 80 degrees. \u00a0I am so ready for that.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/10\/chili2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-4955\" title=\"chili2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/10\/chili2.jpg?resize=675%2C448\" alt=\"\" width=\"675\" height=\"448\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/10\/chili2.jpg?w=675 675w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/10\/chili2.jpg?resize=300%2C199 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/10\/chili2.jpg?resize=150%2C99 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2012\/10\/chili2.jpg?resize=400%2C265 400w\" sizes=\"(max-width: 675px) 100vw, 675px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I don&#8217;t know about you, but when I decide to make something I rarely get to say, &#8220;I have the best recipe for _____!&#8221;. \u00a0I start searching around online and in my cookbooks for a new recipe. \u00a0I don&#8217;t know how many times I&#8217;ve made chili, but except for <a href=\"http:\/\/www.hottie-biscotti.com\/blog\/2011\/01\/15\/chicken-chili\/\" target=\"_blank\">this chicken chili<\/a>, I have never used the same recipe twice. \u00a0I can stop searching. \u00a0I can print a hard copy of this recipe and put it with my keepers. \u00a0Thanks <a href=\"http:\/\/www.marthastewart.com\/317342\/jimmy-fallons-crock-pot-chili\" target=\"_blank\">Jimmy Fallon and Martha<\/a>!<\/p>\n<p>The recipe for Jimmy Fallon&#8217;s chili is made in a crock pot. \u00a0I made it in a big stock pot since I was making 1 1\/2 times the recipe and my crock pot isn&#8217;t big enough. \u00a0(And I needed my crock pot to make a batch of Velveeta and Rotel queso!) \u00a0And honestly, if you&#8217;re already getting a skillet dirty I don&#8217;t see the point in moving everything to the crock pot and getting that dirty too. \u00a0I guess the &#8220;set it and forget it&#8221; aspect is nice, but there is enough prep work that I don&#8217;t think it would be that helpful. \u00a0I did everything in one pot and that meant fewer dishes to clean which made my husband happy. \u00a0And that is good.<\/p>\n<p>&nbsp;<\/p>\n<h2>Beef and Bean Chili<\/h2>\n<p>From Martha Stewart courtesy of Jimmy Fallon<\/p>\n<p>Feeds 12 generously<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>5 pounds ground chuck beef, ground for chili<\/li>\n<li>Coarse salt and freshly ground pepper<\/li>\n<li>1-2 large white onions, chopped<\/li>\n<li>5 cloves garlic, finely chopped<\/li>\n<li>1 jalapeno pepper, seeded and chopped fine<\/li>\n<li>1\/4 cup + 2 tablespoons chile powder<\/li>\n<li>1 1\/2 tablespoons dried oregano<\/li>\n<li>2 teaspoons ground cumin<\/li>\n<li>1\/4-1\/2 teaspoon cayenne pepper (optional)<\/li>\n<li>3 (28-ounce) cans whole tomatoes, coarsely chopped with their juices<\/li>\n<li>1\/2 cup chopped fresh cilantro, plus more for serving<\/li>\n<li>2 (12-ounce) bottles amber beer (I used <a href=\"http:\/\/www.alaskanbeer.com\/amber.html\" target=\"_blank\">this<\/a>)<\/li>\n<li>3 (15-ounce) cans kidney beans, drained and rinsed<\/li>\n<\/ul>\n<div>For Serving<\/div>\n<ul>\n<li>Fritos<\/li>\n<li>Grated cheese<\/li>\n<li>Sour cream<\/li>\n<li>Green onions, chopped<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>In a large stock pot, heat 1 tablespoon olive oil over medium-high heat. Working in batches if necessary, add beef and cook until no longer pink. \u00a0Season with salt and pepper; drain on a large rimmed baking sheet lined with a thick layer of paper towels and set aside.<\/li>\n<li>Add remaining tablespoon olive oil to skillet and reduce heat to medium. Add onions, garlic, and jalapeno; season with salt. Cook until translucent, about 5 minutes.<\/li>\n<li>Add beef to the onion mixture, and mix in chile powder, oregano, cumin, and cayenne pepper.
