Pesto Chicken"},"content":{"rendered":"<p>You can&#8217;t argue with the raw ingredients here. \u00a0Who doesn&#8217;t love pesto, tomatoes, mozzarella cheese and freshly grated parmesan? \u00a0The time and effort this takes is another thing to love about this recipe. \u00a0I recommend this to anyone who doesn&#8217;t have the luxury of tons of time to make dinner but still wants something that didn&#8217;t come from the freezer or got picked up on the way home from work. \u00a0But I sure do enjoy Ben walking through the door with a pizza box every now and then&#8230;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.hottie-biscotti.com\/blog\/2013\/01\/15\/tomato-pesto-chicken\/pestochicken\/\" rel=\"attachment wp-att-4993\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-4993\" alt=\"pestochicken\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/01\/pestochicken.jpg?resize=518%2C518\" width=\"518\" height=\"518\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/01\/pestochicken.jpg?w=575 575w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/01\/pestochicken.jpg?resize=150%2C150 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/01\/pestochicken.jpg?resize=300%2C300 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/01\/pestochicken.jpg?resize=400%2C400 400w\" sizes=\"(max-width: 518px) 100vw, 518px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>While wasting time on Pinterest, I stumbled upon this recipe from<a href=\"http:\/\/www.skinnytaste.com\/2012\/09\/skinny-chicken-pesto-bake.html\" target=\"_blank\"> Skinnytaste.com<\/a>. \u00a0I took the basics of the recipe, kind of ignored the measurements, and whipped this up in no time last week. \u00a0We loved it and will have it again I am sure.<\/p>\n<p>I had everything I needed for this meal already in my kitchen except for the chicken. \u00a0The version of myself I aspire to be would&#8217;ve used the pesto she&#8217;d made last summer with the basil from her garden and then froze in matching labeled containers (see post on Skinnytaste). \u00a0Instead I used a jar of Giada pesto from Target. \u00a0And while lacking in fresh from the garden flavor, it was good.<\/p>\n<p>This can easily be adapted to serve 1 person or a dozen. \u00a0You can slice fresh mozzarella \u00a0or use the bag of shredded mozzarella, but provolone would be a great choice as well. \u00a0If you have a different type of pesto, try it out. \u00a0I think a nice sprinkle of fresh chopped basil would be a great and beautiful finish. \u00a0The ingredients below are what you will need, but the amounts are merely suggestions. \u00a0If you want a healthier option, use the measurement from skinnytaste. \u00a0I didn&#8217;t even measure. \u00a0So use your judgement and make it how you like it.<\/p>\n<p>Skinnytaste slices each chicken breast lengthwise into 2 cutlets. \u00a0For her this may be portion control, but I think it&#8217;s a great way to prepare the chicken even if you aren&#8217;t concerned with all that. \u00a0The chicken cooks more evenly this way and with some of the ridiculously thick chicken breasts I&#8217;ve bought in my time it makes a lot of sense to slice them this way for cooking.<\/p>\n<p>Pair with pasta and steamed veggies or crusty bread and a nice green salad. \u00a0Enjoy.<\/p>\n<h2>Tomato &amp;
