{"id":5055,"date":"2013-03-05T14:06:50","date_gmt":"2013-03-05T20:06:50","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=5055"},"modified":"2013-03-05T14:06:50","modified_gmt":"2013-03-05T20:06:50","slug":"scrambled-eggs-with-spinach-feta","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2013\/03\/05\/scrambled-eggs-with-spinach-feta\/","title":{"rendered":"Scrambled Eggs with Spinach &#038; Feta"},"content":{"rendered":"<p>Breakfast for me is almost always a piece of fruit and a bowl of cereal, unless my sweet man has suggested going to pick up donuts or breakfast tacos. \u00a0When I scramble eggs for Carson I will sometimes scramble some for myself and toast up a piece of bread. \u00a0Scrambled is really the only way I like my eggs. \u00a0I cannot stand a runny yolk. \u00a0I wish I could because I want so badly to order eggs benedict simply because I find it to be a beautiful dish. \u00a0Alas, I am stuck with boring (and rather unattractive) scrambled eggs. \u00a0Eggs are good for you. \u00a0They are full of protein, and you can cook them quickly. They can be a really wonderful way to start your day. \u00a0And there are ways to dress them up and make your eggs more interesting.<\/p>\n<p>My mom would make us cheesy eggs as kids. \u00a0The more cheese the better, specially if some of it got slightly crunchy on the edges of the pan. \u00a0It&#8217;s kinda like fricco! \u00a0You can&#8217;t go wrong stirring some salsa, cheese and crunched up tortilla chips into scrambled eggs for some cheater migas. \u00a0I remember once\u00a0my sister made scrambled eggs for the family with feta cheese and fresh dill. \u00a0 When I took out the carton of eggs a few weeks ago I saw the feta cheese and decided I&#8217;d add some to my eggs. \u00a0Then I remembered that I had some spinach that needed to get used up or else I&#8217;d have to toss it, so I took that out as well. \u00a0I wound up with quite a tasty breakfast and a nice change of pace from cold cereal.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/03\/eggsandfeta.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5060\" alt=\"eggsandfeta\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/03\/eggsandfeta.jpg?resize=500%2C531\" width=\"500\" height=\"531\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/03\/eggsandfeta.jpg?w=500 500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/03\/eggsandfeta.jpg?resize=282%2C300 282w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/03\/eggsandfeta.jpg?resize=141%2C150 141w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/03\/eggsandfeta.jpg?resize=400%2C424 400w\" sizes=\"(max-width: 500px) 100vw, 500px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>This will serve one person, so adjust as needed for more servings. \u00a0I use one whole egg and one egg white. \u00a0Once upon a time I was scared of the yolk because that&#8217;s where that fat is! \u00a0Then I wised up and realized that not only did I need fat in my diet, but a little yolk makes scrambled eggs much tastier. \u00a0I tried making these eggs the first time by adding the raw spinach in with the eggs, but I didn&#8217;t like the way the eggs cooked. \u00a0So the next time I sauteed the spinach in a teeny bit of olive oil, took it out of the pan and let it drain a little on a paper towel, scrambled my eggs, then added the spinach back in near the end of cooking along with the feta. \u00a0I found this to be a much better method.<\/p>\n<p>Spinach cooks down to practically nothing. \u00a0So be very generous with the amount of raw spinach you cook. \u00a0Better to have extra than to find yourself wishing you&#8217;d cooked more of it. \u00a0As far as the feta goes, you don&#8217;t need much. \u00a0It&#8217;s a very flavorful cheese, so a little goes a long way. \u00a0The feta is also pretty salty. \u00a0Use extra salt sparingly.<\/p>\n<p>This is a great savory breakfast and a tasty way to eat more vegetables, something I am working on in my meals. \u00a0Adding some fresh herbs in with the spinach would be lovely. \u00a0Goat cheese would be a nice cheese to try instead of the feta. \u00a0And there are other veggies you can add as well, cherry tomatoes, sauteed zucchini or peppers. \u00a0Lots of options. \u00a0Let me know if you come up with a spectacular combination!
