{"id":5238,"date":"2013-08-13T18:39:01","date_gmt":"2013-08-14T00:39:01","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=5238"},"modified":"2013-08-13T22:46:31","modified_gmt":"2013-08-14T04:46:31","slug":"grilled-caprese-chicken-with-balsamic-glaze","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2013\/08\/13\/grilled-caprese-chicken-with-balsamic-glaze\/","title":{"rendered":"Grilled Caprese Chicken with Balsamic Glaze"},"content":{"rendered":"<p>How can something so simple be so good? \u00a0You probably have every almost every ingredient for this in your kitchen right this very moment. \u00a0Add to that the minimal amount of time it takes to get this on the table, pair with a green salad and some crusty bread and you have the perfect meal. \u00a0Make it for a casual family weeknight or for weekend company. \u00a0It&#8217;s easy to make 2 servings or 10. \u00a0This is one of those recipes to go to when your mind isn&#8217;t working well enough to think too hard about dinner (this happens to me a lot) or when you&#8217;re having last minute guests and don&#8217;t have much time to shop for or prepare dinner. \u00a0The drizzle of glaze isn&#8217;t just great for flavor but it&#8217;s also beautiful and adds a touch of fancy to an otherwise very simple dish. \u00a0 I&#8217;m real excited that this chicken found its way into my life.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/08\/capresechicken.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5240\" alt=\"capresechicken\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/08\/capresechicken.jpg?resize=600%2C426\" width=\"600\" height=\"426\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/08\/capresechicken.jpg?w=600 600w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/08\/capresechicken.jpg?resize=300%2C213 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/08\/capresechicken.jpg?resize=150%2C106 150w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2013\/08\/capresechicken.jpg?resize=400%2C284 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Since there are only a few ingredients, make sure they&#8217;re all fresh and of good quality. \u00a0Get the best looking tomatoes you can find. \u00a0Romas are a good choice and usually a good size. \u00a0They are what I used. \u00a0If the heirlooms at the store look good, splurge on them. \u00a0You only need 1 or 2 (to serve 2-4 people) so go for it! \u00a0Get fresh mozzarella, the kind packed in water, and make sure to slice it generously. \u00a0Now the basil. \u00a0If you have some in your garden then just grab your shears and head out the back door. \u00a0If not, get the fresh kind at the store. \u00a0Don&#8217;t use dried basil. \u00a0It will just not be the same.<\/p>\n<p>This really could not be simpler. \u00a0Grill the chicken (or cook it in a pan on the stove), and in the last couple minutes place the cheese on top so it has time to melt. \u00a0If you do this in the oven you might turn the broiler on for a minute or so to melt the cheese. \u00a0Top with a slice of tomato, sprinkle with the chopped basil and drizzle with balsamic glaze.<\/p>\n<p>The glaze is probably the most time consuming and complicated part about this. \u00a0It&#8217;s not hard, it just requires time and some patience. \u00a0But it&#8217;s worth it. \u00a0The recipe below makes more than you will probably need, but you can save it, keep it in the fridge, and use it for other dishes. \u00a0Drizzle on top of a caprese salad (just what you&#8217;re using in this dish minus the chicken) or as a finishing sauce for grilled pork tenderloin or other meats.<\/p>\n<p>Below are the ingredients that will serve at least 4 using 4 chicken breasts sliced in half horizontally to make 8 total pieces, 2 per person. \u00a0But some of your lighter eaters may just eat one piece. \u00a0If you end up with leftovers I HIGHLY recommend reheating and serving some of the chicken on warm crusty bread with some arugula or other green to make a chicken caprese sandwich. \u00a0Enjoy!<\/p>\n<h3>Grilled Caprese Chicken with Balsamic Glaze<\/h3>\n<p>Serves 4-6<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>4 boneless skinless chicken breasts, sliced horizontally into 2 pieces<\/li>\n<li>1-2 medium to large tomatoes, or 3 to 4 small (you want to try to almost cover the chicken with the tomato slices<\/li>\n<li>8 slices of fresh mozzarella (again, you want the mozzarella slice to almost cover the chicken breast)<\/li>\n<li>kosher salt and pepper<\/li>\n<li>fresh basil leaves, 8-10 (leave them whole or<a href=\"http:\/\/www.finecooking.com\/articles\/cutting-chiffonade-basil.aspx\" target=\"_blank\"> chiffonade<\/a>)<\/li>\n<li>1 1\/2 cups balsamic vinegar<\/li>\n<li>1 tablespoon brown sugar<\/li>\n<li>2 teaspoons Dijon mustard<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<p>Balsamic Glaze<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Pour balsamic vinegar into a small, heavy saucepan. \u00a0Bring the vinegar to a low boil over medium high heat. \u00a0Adjust heat as needed to keep it at a low boil. \u00a0Stir occasionally until vinegar begins to thicken and coat the back of a spoon, 15-20 minutes. \u00a0<\/span><\/li>\n<li>Stir in brown sugar and mustard and cook an additional 5 minutes, remove from the heat and let cool slightly before serving. \u00a0This will thicken a bit as it cools.<\/li>\n<\/ol>\n<p>Chicken<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Season the chicken on both sides with salt and pepper.<\/span><\/li>\n<li>Grill the chicken, 4 minutes on the first side, then flip the breasts over and let cook for another minute or 2. \u00a0Place one piece of mozzarella on each chicken breast and let cook for another 3-4 minutes until chicken is done and mozzarella is melted.<\/li>\n<li>Transfer chicken breasts to a serving platter and immediately place basil leaves on top of the cheese followed by the tomatoes. \u00a0Drizzle lightly with balsamic glaze and serve additional glaze on the side.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2013\/08\/13\/grilled-caprese-chicken-with-balsamic-glaze\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>How can something so simple be so good? \u00a0You probably have every almost every ingredient for this in your kitchen right this very moment. \u00a0Add to that the minimal amount of time it takes to get this on the table, pair with a green salad and some crusty bread and you have the perfect meal.
