Can I still say Happy New Year a week into it? \u00a0I think so. \u00a0One of the things I want to do in 2014 is to blog more here on Hottie Biscotti. \u00a0I did a photo a day project on the <a href=\"http:\/\/babyz.hottie-biscotti.com\/\" target=\"_blank\">Baby Z blog<\/a> in 2013 and love that it gave me a purpose in blogging and a goal to achieve for the year. \u00a0I have a lot of ideas for this blog; weekly recipes, cookbooks to cook through, kid friendly meals, dinners for busy moms\/dads, vegetarian meals, and a few others. \u00a0But I know that if I say I&#8217;m going to do all of that I will be overwhelmed, will start to get my priorities out of order, end up disappointing myself and not be a good wife, mom and friend. \u00a0So I&#8217;m just going to set a goal of blogging once a week. \u00a0Maybe I&#8217;ll start some series, maybe I&#8217;ll blog more than once in a week, maybe I&#8217;ll end up cooking more out of my library of cookbooks. \u00a0But if I don&#8217;t, and all I have is 52 blog posts in 2014, I can say I&#8217;ve accomplished my goal.<\/p>\n<p>Anyone else out there buy a bag of fresh cranberries over the holidays and find themselves with an unopened bag of them in need of being used? \u00a0Anyone? \u00a0I did.<\/p>\n<p><a style=\"color: #41a62a; outline: #000000;\" href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5420\" alt=\"cranberry-pineapple\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple.jpg?resize=858%2C1353\" width=\"858\" height=\"1353\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple.jpg?w=1000 1000w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple.jpg?resize=190%2C300 190w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple.jpg?resize=649%2C1024 649w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Of course what I found when I searched for &#8220;cranberry muffins&#8221; were a bunch of recipes involving orange juice and orange zest. \u00a0I know cranberry and orange are good together. \u00a0But I&#8217;m not super crazy about the combination. \u00a0And I never have orange juice around. \u00a0I took\u00a0<a href=\"http:\/\/allrecipes.com\/recipe\/cranberry-muffins\/\" target=\"_blank\">this muffin recipe<\/a>, used pineapple juice instead of orange, used up some of my cranberries, and wound up with a tasty batch of muffins.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple-muffins.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5421\" alt=\"cranberry-pineapple-muffins\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple-muffins.jpg?resize=858%2C563\" width=\"858\" height=\"563\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple-muffins.jpg?w=1500 1500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple-muffins.jpg?resize=300%2C197 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/01\/cranberry-pineapple-muffins.jpg?resize=1024%2C672 1024w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I really loved the pineapple juice in these. \u00a0They smell spectacular and taste wonderful, especially warm with a little spread of butter. \u00a0The cranberries are perfectly tart and give a beautiful pop of color. \u00a0I think a small can of drained, crushed pineapple mixed in would make them phenomenal. \u00a0Now that I&#8217;m thinking about it, I will probably make these again with some other add ins&#8230;stay tuned.<\/p>\n<p>These come together quickly and have a super simple ingredient list. \u00a0If you don&#8217;t have juice, I think you could get away with milk or buttermilk instead. \u00a0Blueberries, strawberries or raspberries would be great if you have some around. \u00a0Happy baking!<\/p>\n<h3>Cranberry Pineapple Muffins<\/h3>\n<p>From <a href=\"http:\/\/allrecipes.com\/recipe\/cranberry-muffins\/\" target=\"_blank\">allrecipes.com<\/a><\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>1 1\/2 cups flour<\/li>\n<li>3 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/4 cup white sugar<\/li>\n<li>1\/4 cup vegetable oil<\/li>\n<li>1 egg, beaten<\/li>\n<li>6 ounces pineapple juice (1 small can)<\/li>\n<li>1 heaping cup fresh cranberries, roughly chopped<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Preheat oven to 400\u00b0F. \u00a0Grease and sugar a 12-cup muffin tin. \u00a0Set aside.<\/li>\n<li>Whisk together flour, baking powder and salt in a small bowl.<\/li>\n<li>In a large bowl whisk oil and sugar together until light in color. \u00a0Beat in egg, then pineapple juice.<\/li>\n<li>Stir flour mixture into the wet ingredients until just combined, then fold in cranberries.<\/li>\n<li>Divide evenly among the muffin cups.<\/li>\n<li>Bake for 15-20 minutes, until tops are lightly browned.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2014\/01\/06\/cranberry-pineapple-muffins\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Happy New Year!
