Satisfying Potato Soup"},"content":{"rendered":"<p>The forecast for this past week boasted 3 days in a row of cool and rainy weather. \u00a0Time to make some soup! \u00a0I started looking around for a potato soup recipe but most looked so heavy, full of sour cream and cheese. \u00a0I wanted a soup that would leave us full and satisfied without being totally weighed down. \u00a0I finally found a terrific recipe from The Pioneer Woman (are you at all surprised?). \u00a0Instead of cups and cups of whole milk and sour cream, there are cups and cups of chicken broth, with a little dairy to round out the soup and add creaminess. \u00a0It is heavenly.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5635\" alt=\"potato-soup-1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-1.jpg?resize=858%2C578\" width=\"858\" height=\"578\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-1.jpg?w=1500 1500w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-1.jpg?resize=300%2C202 300w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-1.jpg?resize=1024%2C690 1024w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I was immediately excited about the celery, onion and carrot in this soup. \u00a0Made me feel like I was eating even healthier with those extra vegetables. \u00a0And they add such wonderful flavor. \u00a0I used shallot instead of onion because I didn&#8217;t have one. \u00a0Next time, though, I will use a regular onion. \u00a0Less peeling and chopping. \u00a0Everything else in the recipe is unchanged. \u00a0I might cook a few extra pieces of bacon because, if you are anything like me, having some of those crunchy bits on top is necessary. \u00a0The 6 pieces aren&#8217;t enough for the entire pot of soup. \u00a0Maybe this says something about our love of bacon. \u00a0I&#8217;d say 10 pieces would be good, and if you have extra, well, there is not a thing wrong with extra bacon bits.<\/p>\n<p>After cooking the soup you puree about half of it in the blender. \u00a0This creates\u00a0a nice balance of smooth and chunky so that every bite has something to chew on, which is what I like in a soup. \u00a0I used a sharp cheddar on top of the soup, but a sharp white cheddar would also be delicious, or whatever cheese you like on a baked potato.<\/p>\n<p>Top this soup with a little bacon, cheese and green onion and you have all the flavor of a hearty baked potato soup but without the bulk of it. \u00a0This is definitely a recipe I&#8217;ll be making again.<\/p>\n<p>Note: \u00a0When reheating you might need to add some chicken broth or milk to thin it out since it does thicken as it sits in the fridge.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5636\" alt=\"potato-soup-2\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-2.jpg?resize=858%2C1249\" width=\"858\" height=\"1249\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-2.jpg?w=1000 1000w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-2.jpg?resize=206%2C300 206w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/potato-soup-2.jpg?resize=703%2C1024 703w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<h3>Potato Soup<\/h3>\n<p>From <a href=\"http:\/\/thepioneerwoman.com\/cooking\/2013\/01\/perfect-potato-soup\/\" target=\"_blank\">The Pioneer Woman<\/a><\/p>\n<p>Feeds 6-8<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>6 &#8211;
