{"id":5656,"date":"2014-02-12T17:06:32","date_gmt":"2014-02-12T23:06:32","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=5656"},"modified":"2014-02-12T17:06:32","modified_gmt":"2014-02-12T23:06:32","slug":"chocolate-pecan-brownie-cookies","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2014\/02\/12\/chocolate-pecan-brownie-cookies\/","title":{"rendered":"Chocolate &#038; Pecan Brownie Cookies"},"content":{"rendered":"<p>I have loved (and hated) all of the chocolate goodies that have been at my house recently, but these might just be my favorite and a recipe I can see myself going back to the most often. \u00a0These would make a terrific Valentine&#8217;s treat, but really a wonderful cookie for anytime.<\/p>\n<p>A new friend of mine made these as treats for after a morning TV segment that I was lucky to be a part of, and after practically inhaling my cookie I immediately asked her for the recipe. \u00a0Sometimes I forget how good a chocolate cookie can be and often opt for chocolate chip or oatmeal raisin when I&#8217;m going to make cookies. \u00a0But these cookies might become my new go-to. is one of the best compliments when it comes to baked goods, at least in my opinion.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie3.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5660\" alt=\"chocolatebrowniecookie3\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie3.jpg?resize=858%2C1429\" width=\"858\" height=\"1429\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie3.jpg?w=1000 1000w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie3.jpg?resize=180%2C300 180w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie3.jpg?resize=614%2C1024 614w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>The batter for these cookies is more involved than some, but is still not intense by any means. \u00a0After I scooped the first batch the batter began to really thicken up, which makes for a bit of a difficult and messy time getting it scooped out. \u00a0It was hard on my cookie scoop to the point that I worried it might break. \u00a0Thankfully it didn&#8217;t. \u00a0But even if it had it would&#8217;ve been a small price to pay!<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5658\" alt=\"chocolatebrowniecookie1\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie1.jpg?resize=858%2C574\" width=\"858\" height=\"574\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie1.jpg?w=1000 1000w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/02\/chocolatebrowniecookie1.jpg?resize=300%2C200 300w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<h3>Chocolate and Pecan Brownie Cookies<\/h3>\n<p>From Natalie<\/p>\n<p>Makes about 30 cookies<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>1\/2 cup (1 stick) butter<\/li>\n<li>4 ounces of chocolate (70% cacoa or unsweetened squares) chopped<\/li>\n<li>3 cups chocolate chips (semi sweet or a combination of semi sweet, dark and milk chocolate) divided<\/li>\n<li>1 1\/2 cups flour<\/li>\n<li>1\/2 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>4 eggs<\/li>\n<li>1 1\/2 cups sugar<\/li>\n<li>2 teaspoons vanilla<\/li>\n<li>2 cups chopped pecans, toasted<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F. \u00a0Line two baking sheets with parchment and set aside.<\/li>\n<li>Melt butter, chopped chocolate and 1 1\/2 cups chocolate chips in a heavy saucepan set over low heat. \u00a0Stir until everything has melted together, then let cool to room temperature.<\/li>\n<li>In a small bowl whisk together four, powder and salt. \u00a0Set aside.<\/li>\n<li>In a large bowl beat eggs, sugar and vanilla until well combined. \u00a0Add in dry ingredients until just combined, then beat in melted chocolate until well combined.<\/li>\n<li>Mix in the rest of the chocolate chips and the pecans.<\/li>\n<li>Drop by large spoonfuls (about 2 tablespoons) onto prepared baking sheets, 9 cookies per sheet.<\/li>\n<li>Bake for 10 minutes, until tops are set and cracking. \u00a0Cool for a minute or two before removing to a wire rack to cool completely.<\/li>\n<\/ol>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2014\/02\/12\/chocolate-pecan-brownie-cookies\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>I have loved (and hated) all of the chocolate goodies that have been at my house recently, but these might just be my favorite and a recipe I can see myself going back to the most often. \u00a0These would make a terrific Valentine&#8217;s treat, but really a wonderful cookie for anytime.
