href=\"http:\/\/www.hottie-biscotti.com\/blog\/2014\/03\/20\/meyer-lemon-pudding-cakes\/\" target=\"_blank\">these lovely lemon pudding cakes<\/a>\u00a0a few weeks ago and loved the flavor of the Meyer lemons, sweeter than a regular lemon but still tart. \u00a0How could I go wrong by using them in a lemon pound cake?<\/p>\n<p><a data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>I&#8217;ve been on a kick with<a href=\"http:\/\/www.amazon.com\/Americas-Test-Kitchen-Family-Cookbook\/dp\/1933615486\" target=\"_blank\">\u00a0this cookbook<\/a>\u00a0lately. \u00a0It&#8217;s a great resource and it&#8217;s where I found the recipe for this pound cake. \u00a0I&#8217;ve made a\u00a0<a href=\"http:\/\/www.hottie-biscotti.com\/blog\/2010\/08\/15\/cold-oven-pound-cake\/\" target=\"_blank\">cold oven pound cake\u00a0<\/a>before that is really special, but is pretty involved, whipping egg whites and such. \u00a0This cake come together quickly and uses a food processor to mix the wet ingredients so that curdling isn&#8217;t an issue thanks to the quick mixing speed.<\/p>\n<p><img \/><\/a><\/p>\n<p>You can make this pound cake in an 8-inch loaf pan or in mini loaf pans, which is what I chose to do so that I could give these as gifts. \u00a0I added lemon juice, lemon zest and poppy seeds to the classic pound cake recipe to make these cakes. \u00a0From what I can tell, this would create a fantastic plain pound cake as well and I&#8217;ll probably be trying it soon.<\/p>\n<p>The flavor of this cake is perfectly lemony. \u00a0The texture is light and the crust is slightly crunchy and totally delicious. I think it&#8217;s sugaring the pans, one of my favorite things to do with quick breads, and now with pound cake. \u00a0The small loaf pans allow you to have a small piece that still looks complete instead of cutting a larger piece in half. \u00a0I think these would be perfect for a brunch, bay shower, tea party, etc.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/04\/Meyer-Lemon-Pound-Cakes.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-5916\" alt=\"Meyer-Lemon-Pound-Cakes\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/04\/Meyer-Lemon-Pound-Cakes.jpg?resize=795%2C1186\" width=\"795\" height=\"1186\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/04\/Meyer-Lemon-Pound-Cakes.jpg?w=795 795w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/04\/Meyer-Lemon-Pound-Cakes.jpg?resize=201%2C300 201w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/04\/Meyer-Lemon-Pound-Cakes.jpg?resize=686%2C1024 686w\" sizes=\"(max-width: 795px) 100vw, 795px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<h3>Mini Meyer Lemon Poppy Seed Pound Cakes<\/h3>\n<p>Adapted slightly from<a href=\"http:\/\/www.amazon.com\/Americas-Test-Kitchen-Family-Cookbook\/dp\/1933615486\" target=\"_blank\">\u00a0America&#8217;s Test Kitchen Family Cookbook<\/a><\/p>\n<p>Makes 1 8-inch pound cake or 4 mini loaves<\/p>\n<p><em>Ingredients<\/em><\/p>\n<p>Cake<\/p>\n<ul>\n<li>1 1\/2 cups cake flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1 1\/4 cups sugar<\/li>\n<li>4 teaspoons Meyer lemon juice<\/li>\n<li>zest of one lemon<\/li>\n<li>4 eggs, room temperature<\/li>\n<li>2 teaspoons vanilla<\/li>\n<li>2 sticks of butter, melted and hot<\/li>\n<li>1 tablespoon poppy seeds<\/li>\n<\/ul>\n<p>Glaze<\/p>\n<ul>\n<li>1 cup powdered sugar, sifted<\/li>\n<li>6-9 teaspoons Meyer lemon juice<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F.<\/li>\n<li>Grease and sugar your pan\/s.<\/li>\n<li><em>To make the cakes:<\/em>\u00a0Whisk flour, baking powder and salt together in a small bowl, then set aside.<\/li>\n<li>In the food processor combine the sugar, lemon juice, zest, eggs and vanilla and mix until combined, about 10 seconds. \u00a0With the processor still running, pour in the melted butter through the tube in a slow, steady stream. \u00a0Transfer the mixture to a large bowl.<\/li>\n<li>Sift 1\/3 to half of the flour mixture over the wet ingredients and whisk until almost no flour is visible. \u00a0Repeat with the remaining flour in 1 or 2 more additions. \u00a0Whisk in the poppyseds just to combine and be careful not to overmix.<\/li>\n<li>Pour the batter into the prepared pan\/s. \u00a0If you use mini loaf pans, 2 cups of batter each is about right.<\/li>\n<li>Bake for 40 minutes (for mini loaves) and 50-60 minutes for an 8-inch loaf until a cake tester comes out with a few crumbs.<\/li>\n<li>Let cool in the pan for 10 minutes, then remove from the pan and let cool on a wire rack.<\/li>\n<li><em>To make the glaze<\/em>: after sifting the sugar add lemon juice, start with 1 tablespoon, then add juice one teaspoon at a time until it reaches the consistency you desire. \u00a0Drizzle onto the cooled cakes.<\/li>\n<\/ol>\n<div id=\"wp_fb_like_button\" style=\"margin:5px 0;float:none;height:70px;\"><script src=\"http:\/\/connect.facebook.net\/en_US\/all.js#xfbml=1\"><\/script><fb:like href=\"https:\/\/www.hottie-biscotti.com\/blog\/2014\/04\/04\/mini-meyer-lemon-poppy-seed-pound-cakes\/\" send=\"false\" layout=\"standard\" width=\"400\" show_faces=\"true\" font=\"arial\" action=\"like\" colorscheme=\"light\"><\/fb:like><\/div><!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>When you buy a bag of Meyer lemons, you need to use that bag of Meyer lemons. \u00a0I made\u00a0these lovely lemon pudding cakes\u00a0a few weeks ago and loved the flavor of the Meyer lemons, sweeter than a regular lemon but still tart. \u00a0How could I go wrong by using them in a lemon pound cake?
