{"id":6132,"date":"2014-05-08T07:01:53","date_gmt":"2014-05-08T13:01:53","guid":{"rendered":"http:\/\/www.hottie-biscotti.com\/blog\/?p=6132"},"modified":"2014-05-08T07:01:53","modified_gmt":"2014-05-08T13:01:53","slug":"simple-sundae-brown-sugared-pineapple-with-toasted-coconut-and-almonds","status":"publish","type":"post","link":"https:\/\/www.hottie-biscotti.com\/blog\/2014\/05\/08\/simple-sundae-brown-sugared-pineapple-with-toasted-coconut-and-almonds\/","title":{"rendered":"Simple Sundae: Brown Sugared Pineapple with Toasted Coconut and Almonds"},"content":{"rendered":"<p>I love ice cream. \u00a0And I eat it a lot. \u00a0I have some pretty much every night of the week. \u00a0And I usually have 2 flavors in my freezer at all times. \u00a0I&#8217;m not even lying. \u00a0Sometimes I keep it really simple, especially if I have a flavor that already has a lot of goodies in it. \u00a0When I eat vanilla ice cream, though, I just have to mix something in, chocolate chips, crumbled cookies or chopped up candy like Reese&#8217;s or Snickers.<\/p>\n<p>With summer weather upon us I can&#8217;t think of anything better than trying out some new ice cream toppings! \u00a0This one has pineapple cooked in warm brown sugar sauce and is topped off with toasted coconut and almonds. \u00a0It&#8217;s real good and real easy,<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-6135 size-full\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae2.jpg?resize=858%2C1327\" alt=\"Brown Sugared Pineapple Sundae with Coconut and Almonds | Hottie Biscotti\" width=\"858\" height=\"1327\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae2.jpg?w=2324 2324w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae2.jpg?resize=662%2C1024 662w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae2.jpg?w=1716 1716w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>This week I found myself with an incredibly delicious container of fresh pineapple after using one as a <a href=\"http:\/\/instagram.com\/p\/ndaVX7wKRd\/\" target=\"_blank\">pregnancy photo prop<\/a>. \u00a0It&#8217;s great for snacking and for adding to yogurt, but I wanted to try something a little different with it. \u00a0A while back a friend made dessert for a dinner party by just cooking up some fresh pineapple in butter and brown sugar and serving it on top of ice cream. \u00a0I used the same method but added some toasted coconut and almonds to make a delicious, quick and simple ice cream sundae.<\/p>\n<p>I used vanilla ice cream in this sundae, but coconut would be delicious and add to the tropical-ness of the dessert. \u00a0To toast the coconut and almonds, simply spread them out on a cookie sheet and pop them in a 350\u00b0F oven for a few minutes, until everything just begins to brown. \u00a0The coconut will brown quicker, so you can do them on separate cookie sheets, or remove the coconut from the cookie sheet and continue to toast the almonds. \u00a0But do make sure to have them toasted! \u00a0The flavor is better and so is the texture in the sundae.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-6134 size-full\" src=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae1.jpg?resize=858%2C1237\" alt=\"Brown Sugared Pineapple Sundae with Coconut and Almonds | Hottie Biscotti\" width=\"858\" height=\"1237\" srcset=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae1.jpg?w=1798 1798w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae1.jpg?resize=208%2C300 208w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae1.jpg?resize=710%2C1024 710w, https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/pineapplesundae1.jpg?w=1716 1716w\" sizes=\"(max-width: 858px) 100vw, 858px\" data-recalc-dims=\"1\" \/><\/a><\/p>\n<p>Do you have any favorite toppings for your ice cream?
