Chip and Toffee Pudding Cookies"},"content":{"rendered":"<p>In high school and college I was a lifeguard at a community pool during the summers. \u00a0A couple of the other girls and I baked treats and brought them up to share with everyone a couple times a week. \u00a0One of the cashiers brought chocolate chip pudding cookies a few times and I fell in love with them. \u00a0She shared the recipe with me, but since this was more than 10 years ago and it was written on a piece of notebook paper I have lost it. \u00a0But thanks to Pinterest I found another recipe for pudding cookies that seems close to the recipe I got from Ashley! \u00a0What would we do without the internet?!<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.hottie-biscotti.com\/blog\/wp-content\/uploads\/2014\/05\/puddingcookies2.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-full wp-image-6195\" \/><\/a><\/p>\n<p>These are thick, chewy and soft chocolate chip cookies, the kind I prefer. \u00a0It&#8217;s a basic chocolate chip cookie recipe, but contains a secret ingredient, \u00a0a small package of vanilla pudding mix! \u00a0This makes them softer than typical cookies and quite addictive. \u00a0I added in some toffee pieces along with the chocolate chips. \u00a0The options are endless when it comes to mix-ins though. \u00a0You could add any kind of chocolate chip, nuts, caramel bits, crushed up pretzels, etc.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter target=\"_blank\">These<\/a> are my favorite chocolate chips, milk chocolate chips from Guittard. \u00a0They&#8217;re bigger than the standard chip, have terrific milk chocolate flavor and melt terrifically in these cookies. \u00a0And in your mouth. \u00a0I may or may not eat them by the handful straight from the bag on occasion&#8230;.or daily.<\/p>\n<p><img decoding=\"async\" \/><\/p>\n<h3>\u00a0Chocolate Chips and Toffee Pudding Cookies<\/h3>\n<p>From <a href=\"http:\/\/life-in-the-lofthouse.com\/chocolate-chip-pudding-cookies-2\/\" target=\"_blank\">Life in the Lofthouse<\/a><\/p>\n<p>Makes 24-30 cookies depending on their size<\/p>\n<p><em>Ingredients<\/em><\/p>\n<ul>\n<li>2 sticks of butter, softened<\/li>\n<li>3\/4 cup brown sugar<\/li>\n<li>1\/4 cup granulated sugar<\/li>\n<li>1 small box (3.4 ounces) instant vanilla pudding mix<\/li>\n<li>2 eggs<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>2 1\/4 cup flour<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 teaspoon kosher salt<\/li>\n<li>1 bag (11 ounces) chocolate chips<\/li>\n<li>1\/2 cup toffee pieces<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Preheat oven to 375\u00b0F.<\/li>\n<li>In the bowl of a stand mixer, or in a large bowl using a hand mixer, beat the butter and sugars until fluffy.<\/li>\n<li>Add in the pudding mix and beat to combine.<\/li>\n<li>Add in the eggs, one at a time, beating between additions, followed by the vanilla.<\/li>\n<li>Beat in the flour, baking soda and salt until just combined. \u00a0Use a spatula to stir everything together from the bottom of the bowl.<\/li>\n<li>Stir in the chocolate chips and toffee with the spatula.<\/li>\n<li>Line two cookie sheets with parchment paper. \u00a0Scoop dough by rounded tablespoons onto the sheet, spacing about 2 inches apart, 6-8 cookies per sheet.<\/li>\n<li>Bake for 8-10 minutes, until cookies are slightly browned.<\/li>\n<li>Let cool on cookie sheet for 5 minutes before transferring to a cooling rack. \u00a0Scoop dough onto the other cookie sheet while the one you just used cools off.<\/li>\n<li>Cookies will firm up as they cool, so if they appear
