Salad with Chickpeas, Tomatoes, Herbs and Feta"},"content":{"rendered":"<p>I have three of the best sisters on the planet. \u00a0I was lucky enough to have two of them down to visit a couple weeks ago. \u00a0We are all different, but we all share an interest in food and cooking. \u00a0When a holiday or party is coming up we often menu plan together. \u00a0Lindsey and Sarah found<a href=\"http:\/\/www.foodnetwork.com\/recipes\/giada-de-laurentiis\/orzo-salad-recipe.html\" target=\"_blank\"> this recipe for an orzo salad<\/a> while they were visiting and it was the perfect side dish for the steak Ben grilled for dinner. \u00a0I made it again the following weekend when my parents were in town and it was a hit yet again! \u00a0This salad is simple and delicious and a great salad comes together quickly, can be prepared ahead, and can be served room temperature or cold, making it a really convenient dish. \u00a0You can adjust the ingredients to your liking. \u00a0I used a lot of tomatoes and herbs, with a small amount of dressing and feta. \u00a0You can serve more dressing and feta on the side for guests who want more of it. \u00a0You could leave out the chickpeas if you don&#8217;t care for them, but I probably wouldn&#8217;t add anymore than the can called for. \u00a0The chickpea to orzo ratio seemed just about perfect.<\/p>\n<p>The basil and mint combination make this salad bright and refreshing, the feta is a great flavor addition, the chickpeas are a nice texture surprise and the tomatoes provide lovely flavor and color.<a first time my sister made the dressing I was almost out of red wine vinegar so she subbed in some balsamic to make up the difference. \u00a0The next time I made it I used all red wine vinegar and it definitely changes the dish. \u00a0I think I preferred it with a little balsamic, but both ways are quite good.<\/p>\n<p>I hope this makes its way to your table this summer! \u00a0You will not be \/><\/a><\/p>\n<h3>Orzo Salad with Chickpeas, Tomatoes, Herbs and Feta<\/h3>\n<p>From Giada DeLaurentiis<\/p>\n<p><em>Ingredients<\/em><\/p>\n<p>Salad<\/p>\n<ul>\n<li>1 1\/2 cups orzo<\/li>\n<li>1 15-ounce can chickpeas, drained and rinsed<\/li>\n<li>1 1\/2 to 2 cups cherry, grape or other small tomatoes, halved or quartered depending on their size<\/li>\n<li>1\/2 cup finely chopped red onion<\/li>\n<li>1\/2 cup fresh basil leaves<\/li>\n<li>1\/4 cup fresh mint leaves<\/li>\n<li>4-6 ounces feta cheese, crumbled<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>Red Wine Vinaigrette<\/p>\n<ul>\n<li>1\/2 cup red wine vinegar (can sub in half for balsamic)<\/li>\n<li>1\/4 cup lemon juice<\/li>\n<li>2 teaspoons honey<\/li>\n<li>2 teaspoons salt<\/li>\n<li>fresh ground pepper to taste<\/li>\n<li>1\/2 cup olive oil<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<ol>\n<li>Whisk vinegar, lemon juice, honey, salt and pepper together in a bowl. \u00a0While whisking, drizzle in the oil. \u00a0Set aside. <em>\u00a0Note: You won&#8217;t use all the dressing. \u00a0Save what&#8217;s left in the fridge to use on a green salad.<\/em><\/li>\n<li>Cook orzo in boiling water according to package instructions, until al dente. \u00a0Drain, then transfer to a serving bowl, toss and let cool.<\/li>\n<li>Toss orzo with the beans, tomatoes, onions and herbs.<\/li>\n<li>Drizzle with some of the dressing, taste and add more until you&#8217;re pleased with the flavor.<\/li>\n<li>Toss in the feta if serving right away, otherwise cover and chill until
